I had one of those ebay strat necks kicking around so I decided to sit down with the saw and chisels and gave it an endurneck profile. Such a good feeling seeing how it came out.

Could this be done on a finished guitar as well? Might work out nicely with my older Yamaha LP copy

Battery-powered belt sander, then some hand-sanding (those cheap foam blocks for sandpaper help, in between machine and fine sanding) and some tung oil. Trust me... it feels like the access is better but also looks surprisingly cool, (unless you have a bottom (back) binding on the guitar.

I've sanded down those neck pockets before, perfectly possible.
Not uncommon to see it happen to PRS guitars, actually - they've got a massive hump.
Just check, before you do anything, that there's enough material in and around that neck joint to support all the tension once you're done carving bit away... It won't hold together by wishful thinking 😜👍🤣
