I used radish, which is often eaten in stews and pickles, as an ingredient in yakisoba. The trick is to rub it with salt beforehand to remove the moisture and the characteristic bitterness. It is a lightly salty sauce with umami from minced chicken and pickles.
■Fried soba with radish and chicken
Radish
100g minced chicken
Takana pickles
Scallions to taste
2 servings of Chinese steamed noodles
《Seasonings》
3g salt
1 tsp sesame oil
1 tsp soy sauce
1+ tbsp daihaku sesame oil
2 tbsp sake
150ml chicken soup
1/2 tsp salt (adjust according to the saltiness of the pickles)
A little pepper
A little soy sauce
2 tbsp water-dissolved potato starch
1 tbsp sesame oil
1. Cut the radish into 5cm long sticks, sprinkle with salt, and rub until soft.
Roughly chop the spring onion and roughly chop the pickled takana.
Put the noodles in a bowl and heat in the microwave, then add the sesame oil and soy sauce and mix.
2. Heat the light sesame oil in a frying pan, add the noodles from step 1 and cook over medium heat. When they start to brown, turn them over and cook in the same way. Remove to a plate lined with kitchen paper and break them up.
3. Add the ground chicken to the frying pan from step 2 and fry. When they start to turn whitish, leave a hole in the center and add the pickled takana and squeezed-out daikon radish. Add the sake and chicken soup, cover and simmer for 2-3 minutes.
4. Add the spring onion, taste the soup and adjust the flavor with salt and pepper. Thicken with water-dissolved potato starch and finish by drizzling sesame oil. Place the noodles on a plate, top with the sauce and it's done!
