    MUTTON YAKHNI PULAO
    Preparation time 10-15 minutes
    Cooking time 40-45 minutes
    Serve 2-4
    Ingredients
    For Mutton Marination
    1 kg Mutton (with bones) मटन
    1 Star anise, चक्रफूल
    3-4 no. Black cardamom, बड़ी इलायची
    2-3 Green cardamom, हरी इलायची
    ½ tsp Fennel seeds, सौंफ
    3-4 Cloves, लॉन्ग
    12-15 no. Black peppercorns, काली मिर्च के दाने
    1 Bay leaf, तेजपत्ता
    2 medium Onion, sliced, प्याज
    Salt to taste, नमक स्वादअनुसार
    2 cups Curd, beaten, दही
    For Yakhni
    1 ½ tbsp Oil, तेल
    ½ tbsp Ghee, घी
    1 tsp Shahi jeera, शाही जीरा
    1 medium Onion, sliced, प्याज
    Marinated Mutton, मैरिनेटेड मटन
    2-3 no. Green chillies, slit into half, हरी मिर्च
    1 inch Ginger, peeled sliced, अदरक
    few Tender Coriander stem, धनिया के डंठल
    3-4 cups Water, पानी
    ¼ tsp Vinegar, सिरका
    For Mutton Yakhni Pulao
    2-4 tbsp Ghee, घी
    1 Bay leaf, तेजपत्ता
    ½ inch Cinnamon stick, दालचीनी
    ¼ tsp Cumin seeds, जीरा
    ¼ tsp Fennel seeds, सौंफ
    Cooked Mutton, पका हुआ मटन
    Prepared Yakhni, तैयार किया हुआ यखनी
    3 cups Sella Basmati rice (soaked for 20 minutes) सेला बासमती चावल
    1 ½ tbsp Saffron water, केसर का पानी
    For Raita
    ¼ cup Fried onion, chopped, तला हुआ प्याज
    few Mint leaves, chopped, पुदीना पत्ता
    ½ tbsp Coriander leaves, chopped, धनिया पत्ता
    2 no. Green chili (less spicy & chopped) हरी मिर्च
    1 cup Curd, beaten, दही
    Salt to taste, नमक स्वादअनुसार
    Prepared Tempering, तैयार किया हुआ तड़का
    For Tempering
    1 tbsp Oil, तेल
    ¼ tsp Shahi jeera, शाही जीरा
    1 tsp Chili flakes, चिल्ली फ्लक्स
    For Garnish
    Fried onion, तला हुआ प्याज
    Coriander sprig, धनिया पत्ता
    Mint sprig, पुदीना पत्ता
    Silver vark, चांदी का वर्ख
    Process
    For Mutton Marination
    In a bowl, add mutton with bones, star anise, black cardamom, green cardamom, fennel seeds, cloves, black peppercorns, bay leaf, onions, salt to taste, curd and mix well.
    Marinate for 15 minutes and keep it aside for further use.
    For Yakhni
    In a deep handi, add oil, ghee, once it's hot, add shahi jeera and let it splutter well.
    Add onions and saute for a minute or until translucent, Add marinated mutton and saute well.
    Cook it for 7-8 minutes on medium flame. Add ginger, green chili, and tender coriander stem.
    Add water as required, vinegar and skim it with the help of a ladle.
    Simmer the yakhni for a while or until the mutton is tender.
    Remove the bones in a tray and keep aside for further use. Strain the yakhni and keep aside for further use.
    For Mutton Yakhni Pulao
    In a deep handi, add ghee, once it's hot, add bay leaf, and cinnamon stick, cumin seeds, fennel seeds let it splutter well.
    Add cooked mutton and saute on medium flame for 2-4 minutes.
    Add prepared yakhni, soaked sella basmati rice and cover it with the lid. Let it cook on dum for 10-15 minutes or cover it with muslin cloth.
    Once the rice is cooked well, pour some saffron water and gently mix the rice.
    Transfer it into a serving bowl, garnish it with fried onions, coriander sprig and silver vark.
    For Raita
    In a bowl, add fried onion, mint leaves, coriander leaves, green chili, curd, salt to taste.
    Add prepared tempering and mix well.
    Keep aside for further use.
    For Tempering
    In a pan, add oil, once it's hot, add shahi jeera and let it splutter well.
    Add chili flakes and mix well.

    I was watching your recipe and planned to make it today... I made it and it turned absolutely like any restaurant biriyani instead of pulao. To add a little kolkata touch I added also a little kewra water and mitha attar.. and the taste..... Everyone was appreciating at home... Thankyou Mr. Brar for this amazing recipe. It was so easy to make. Never have I made this type of pulao or biriyani, so easy... You always amuse us with your easy methods.

    Bhai, Aapka recipe acchi hoti hai, but process or video aapki itni lambi hoti hai ki scroll krke jana padhta hai. Pls try too minimize ur video time 7 to 8 minutes only.

      I can build the road in front of my house.
      govt role only to maintain the drain in front of my house.
      govt unnecessarily imposing high gst for the services i dont need like -re1 rice for the lazy
      education for the children of drunkards, hospitals for those drunkards etc
      So govt its time that u take less stress n focus only on drain cleaning nothing else.
      Live n let live
      govt officials busy in bargaining and creating fortune only for themselves
      high in corruption n laziness
      Others come to businessmen for donations
      spent much on mutton n liquor
      even now on SUVs n bullets
      n come to shop bargaining
      Pay high gst
      then pay high toll tax at highways
      poor education at govt institution
      filthy n high rush railways
      poor healthcare at govt institution
      still bjp hypnotize people and win elections
      Meat n liquor consuming people ask businessmen for chanda/donation, also ask for credit for every petty expense, they dont have funds to support their family still come loud at shop

    You make everything look so easy, Chef! Yakhni Pulao is one of my favorites. I like the whitish rice and just the hint of spices and ingredients in the mutton. I will add saffron next time. I loved your raita. Have to make it with green apples. Thank you for inspiring. Love from Canada.
