Reason it taste diff each time is bc the islands basically have half African and half Indian people so the food is different depending on the people but it’s mainly inspired by Indian cuisine

You should go to Hibiscus and get their curry beef (specifically this) and roti! They serve it with a side of dhal and it’s so good. Another recommendation from Hibiscus is their pepper shrimp and get it spicy! I would also recommend pepperpot, but no one cooks it better than my grandmother 🇬🇾

All the curries I’ve ever had in Maryland so far have all been bland. It’s like nobody uses seasoning for the curry. I’ve been a Baltimore resident/Glen Burnie resident pretty much all my life and curries have not been right

The sourish taste on the doubles is the tamarind sauce. & you’re suppose to dip the pholourie into the tamarind sauce. (Which you ended up doing)
Green sauce is called Shado Beni(cucumber, cilantro etc.). Brown sauce is Tamarind Sauce.
