Great to watch you again guys! I have a Filipino trivia about Bicol Express. I lived in north Luzon and when I was a small kid, I heard there was a train service to Bicol (Southern Tagalog Region) by the Philippine National Railways called "Bicol Express". At that time Bicol is known for its spicy with chili and stories went around that in a typhoon, Bicolanos (people living in Bicol) would prepare and protect their chili plant beds by propping the chili plant with bamboo sticks and anything to protect their valuable plants first before thinking of preparing to protect their own houses hahaha. So if you wanna taste this spicy delicacy fast, take the Bicol Express...goes the story. And the first Bicol Express to my recollection that I have tasted is river snails (brown one) cooked with coconut milk and chili. Happy eating and more power. God bless.

Wow! You guys like the shrimp paste. Some doesn't like the smell and taste because it is too fishy. Maybe you guys will like Kare-Kare too, as long as none of you have allergy with peanuts.
Most of Filipino dishes is really better with rice because they can be salty sometimes.

Bicol/ Bikol Express, also called sinilihan or "smothered with lots of chilis".. This dish was nicknamed after a regional rail line on Philippine National Railways, called the Bicol Express that traverses from National Capital Region to the Bicol Region. This food was namd after a railway line and not because it cooks fast. The people of the Bicol Region (region 5) called the "Bicolanos" really love spicy and coconut-based dishes and it shows in their regional cuisine and culture. The popularity of the food Bicol Express can be attributed to a Filipina Chef by the name of Cely Kalaw, a culinary celebrity, who brought the regional fare into the Philippine national consciousness in the 1970s.

BICOL EXPRESS, you can cook it with coconut milk or in cooking oil. To cook this dishes It is more in chili and most delicious if you cook it and use a coconut milk not on the pack, but the coconut milk that you buy in the market. You can be cook it with meat or fish or vegetable with meat and fish. I am a BICOLANO and that is my favorite food. More chili must better.

You can cook shrimp paste in fish ,you fry fish first then saute chop garlic, onion and ginger and chopped tomatoes , then when aroma comes out add water and let is boil then add the fried fish add shrimp paste along with okra, eggplant and pumpkin, if the vegetables becomes soft and cook taste it first so you may see if still need to add salt.
