I suggest watching the MV for "Turbulence". It's my favorite ATEEZ song and the lyrics are very touching. (When they sang it during their concerts, they often cried.) However, it's one of their slower songs.
ARRIBA and Silver Light are really good songs too. They don't have MVs, but they are performing them on their current world tour.
One more thing I can think of: Hongjoong (rapper + leader/captain) has some covers and rearrangements of songs (+MVs) on RUclips (songs from Prince, Linkin Park, Michael Jackson, etc.). My favorite one is "Lemon Tree". Since you really like MATZ: He also uploaded a video of how he made MATZ and it's quite entertaining to watch.

For personality content the best places to look are their shows on RUclips because sometimes fan edits take things out of context and mistakes their characters
There are two shows that are recommended for the ateez Beginner
1. Fever road. It is short just 8 episodes and it should be watched in order. The plot is bassically the boys are tricked believing they will be going on a healing vacation but instead the company tricks them into playing a very long very annoying jumanji game that they have to play or sometimes they don’t get food and sometimes it wakes them up at 4 am.
2. The wanteez. This is their main show i forgot exactly how many episodes but it’s around 30 and it’s hella funny. There are arcs but it doesn’t have to be seen in any specific order and the most popular episodes are the ones where they were put under anesthesia on camera and the ones where they all get drunk together on camera.
to get to know them you can react to some fan made videos of moments from ateez content, for example ateez just keeps getting louder or ateez funny moments (they are actually funny) LOVE YOUR REACTIONS BTW!!

The last video where you were like "who the fuck is this??" was Ring Ding Dong, the debut song of the kpop group, SHINee. They're one of the oldest active kpop groups, and they're iconic. Their music is a little more mainstream kpop than ATEEZ or Stray Kids are, so I'm not sure if you'd like it, but Jonghyun, who tragically left us a few years ago, still remains one of the best voices in the industry. His song Diphylleia Grayi is so, so beautiful. If you check anything out by him, please let it be that song.

I know the long guide seems really daunting if you just look at the length. But I promise it's the absolute best and a super fun and entertaining watch. It's not just them spitting off a ton of facts. Nearly every reactor I've seen watch it loved it and thought it went really fast.
