I like how you're approaching the war being described in this game with a very neutral perspective. I don't often see people question if this is really what happened, because history has it's fair share of blunders, especially when it comes to the documentation of conflict between two groups of different people. That's why it's always awesome to watch different people play games, because each person always has something unique and interesting to say about it.
I heard the human can be referred to by any gender, but Kris in Deltarune is canonically they/them. Likely cuz the humans in this game are a bit more up to interpretation whereas Kris has a distinct character

Fun fact, the switch version of Undertale has some later (optional/missable) content that expands quite a bit on Mad Dummy's character. It's unrelated to the main story, and I quite enjoy it.

I personally have the headcanon that monsters were the ones who instigated the war, and the humans were acting in retaliation. The weird part is that this idea isn't even entirely baseless- after all, the monsters had a detailed illustration and full understanding of what a human with a monster's SOUL looked and operated like. It would have had to have happened at least once before they were sealed based on the timing of the monsters colonizing the Capital.
Also, just to be clear- if this were true, I do not believe it would justify the humans' actions. If we can't verify every of the monsters' claims, the BARRIER is still a horrible prison to subject any group of people to.

It was said that not a single monster soul was taken, even though the humans knew the power of merged souls and started the war because they thought monsters would steal one of theirs. Maybe this is a sign that humans didn't want to annihilate monsterkind and just weaken them. This is also supported by the fact that, once monsters were pushed back underground, the humans took great magical efforts to create a barrier, and NOT to finish off the remaining monsters, the royal family included. I wonder what this could mean in the lore...

A tip: It often pays off to use ACT > Check! It will tell you the stats of the monster and a hint on how to best defeat/spare them Also, you can heal during fights by going to ITEM and then picking something to eat

about the history at the beginning. Generally the lore is 100% honest. It's the gameplay and Dialogue that you have to treat with more nuance and read between the lines.

So, I've noticed that you backtrack a lot and there's nothing inherently wrong with it. However, in undertale a good rule of thumb is, after a big fight or major event, the next room will always give you a chance to save. Also, if you fought a monster in a room, then it was a "mandatory" battle and it's best to continue forward rather than backtracking because Undertale is weird when it comes to monsters. becasue not every room/floor have monster encounters and the rooms that do, are dependant on how many steps you take in said room. Hope this helps ^^. if you want to backtrack that's perfectly fine, I just don't want you to get frustrated for falling for a monster encounter loop :)

Your character does not have a canonical gender. They are referred to with they/ them pronouns by the creator of the game (toby fox) though.
That is called being nonbinary. Toby fox tweeted how Frisk is a they/them nonbinary person
