    I was making fudge at work today and I was inspired to become a chocolatier. This is even more inspirational. It's a labour of love. I'm 45 years old and was a waitress forever and a housekeeper for a year or two. I got a job in a commercial bakery and I think I found my new found career. I love making fudge. I make 55 batches a day. I can never grow weary of it. Chocolate is my newfound passion.

    No matter how I try I fail at tempering. My room temperature is 27 to 28 degree celcious so I don't know whether my room temperature is too hot for tempering or now. Am just sick. Please could you teach me tempering. I watched many videos about tempering but after tempering my chocolate never get hardened.

    Un peu bizarre la technique du temperage et ça se voit dans les coques de chocolat, elles ne sont pas brillants. Ce que j'ai trouvé intéressant, les machines.
