Can you explain to me why you had the surcharge in the first place *instead* of just higher base price to begin with? I can only think of two reasons. One, tax evasion--by making the surcharge not income somehow, you can use all of it for whatever reason. This is probably illegal Two, to catch people unawares. Sure, you are willing to "explain" to whomever asks, but what about people who didn't noticed? Transparant my left arse cheek, if they have to notice and ask, it isn't transparant.
Before minimum wage increases, we had servers with a 5 to 7 table station. Say 6 4-tops, avg bill p/p $25. Throughout the shift servers will turn over their tables twice, at a minimum. So, 6 tables x 4 persons at $25 each = $600, with 2 turnovers, = $1,200. $1,200 x .20 tip = $240. Plus wage of $16 p/hr x 6hrs p/shift = $96. $96 + $240 = $336 per shift. $336 x 5 day work week = $1,680. Say 2 months off to travel Europe. So, $1,680 x 44 weeks = $73,900. And that is with a $25 p/head bill. Let's not mention servers at the Grange Restaurant, et al....
Either way the customers are paying for it but I would prefer to know up front. Then I can decide whether or not I want to go there.
