Ok. I just made this bread, almond version of clean keto bread with bamboo fiber. Followed directions exactly. I read her suggestion in the comments stating to leave the bread in the oven, an additional 30 minutes, door slightly ajar, oven off. It came out looking perfect. ☺️ so now the taste part. Some parts of the bread was still wet/moist. Those parts reminded me of egg. Other than that, taste of bread was 👍🏼 good😁. Next time, I will leave it an additional 10-20 minutes. The top did not burn or get browner. This is the first time ever I have naked bread. So proud of myself. Thank you so much. Now I can have bread for breakfast and lunch
Oh wow...well done!! I'm so happy that you baked bread successfully and you're 90% happy with it. You could still dehydrate or bake it a little longer in the oven given your bread didn't brown at all. Thanks so much for the review 😊
In order to achieve a desirable browning effect, it is suggested to substitute monkfruit with Alulose or use a combination of both, as long as allulose is present. Allulose has been proven to effectively brown baked goods :--))

Mel, while this is an absolute great recipe, I spend so much time in the kitchen cooking all of my keto foods from scratch, that I do not want to go through the time, and the process of making dried chicken powder for this recipe, and I refuse to purchase the expensive chicken powder. It would be wonderful to see a similar recipe with bamboo fiber, fine almond flour, egg white powder (or liquid egg whites) Yeast. I've been living a ketogenic lifestyle now for over 4 yrs and i'm still looking for that elusive perfect white bread recipe that provides a taste and texture close to a good regular white flour bread. I keep working on it though. Ty for taking the time to put this together and share it with us.

I just made this recipe. Not sure what went wrong but it looks nothing like yours. Took it out of the loaf pan and noticed that it started to fall. I cut into it and noticed that the underneath was very wet even though the middle was dry. It did not rise as much either, I thought it would given the amount of baking powder. With ingredients as expensive as they are, I won’t make it again.

Yes just do it Bonita...you got this! Ok let me explain about the flour. Clean keto flour ingredients are bamboo fiber, Gelatine, egg white protein and the last ingredient is your choice. You can use a nut or meat flour like Almond, lupin or chicken flour and you will need 360 grams. This looks amazing, but I have a couple of questions: 1. Why not whip egg whites before combining? Wouldn't this improve the airiness of the bread? 2. The bread still seems a bit crumbly, have you tried adding Xanthan gum (and more water, of course) to improve elasticity and getting an even more airy bread? Would that even work? Again, thank you for this marvelous recipe. :)
Thanks so much Shayeta...so sorry I' trying to recall all my experimenting. I didn't find much of a difference between whipped or un-whipped egg whites. As xanthan gum is a binder it would solidfy the batter and I wanted to have the bread easy to make rather than molding a ball of dough so didn't try that, and I didnt try adding more water. If you're open to it why not experiment? To taste...the bread didnt feel dense to me but I would love to know your thoughts if you do try the recipe :))))

Hello, you need about 4 or 5 whole eggs depending on how big they are. In any case the egg amount should equate to 1 cup or 240g. Oh do you mean you will use the clean keto almomd flour blend? It won't work with plain almond flour by the way ❤️❤️❤️
You need to use the CK Almond Flour okay. Add 360g worth and blend well with the egg white protein, bamboo fiber and gelatin. This is the flour that works 😊

YEAHHHH I finally made this bread and it worked!!! Except my dough was more like a thick batter mine was not chunky like yours but it cooked fine and tastes delicious!!

HI Mel! I baked this bread and it was very good. :) However it was wet in the middle. Next time I will dehydrate it in the oven. Should I leave it in the pan (lid on or off?) or put it on the wire rack?
Mel if you wanted to do a double batch would you just double all ingredients? 4 Tbs baking powder would be a bit much?? I just did that and had to toss 2 loaves😢
Hello Marguerite 👋 The CK flour ingredients are chicken flour, bamboo flour, egg white protein powder and gelatine. You can use the chicken flour you have but not on its own. You will need the CK flour blend 😊😊😊

Hello, please check the description ription box because I have listed all the ingredients with weight measurements. That will probably be more accurate. I haven't tried it with baking soda but I also think it would work 😊
New day, new attempt. And more questions. Why is my dough much more liquid than in the video? I mix by hand! Why is my dough darker (with almond flour) and much greasier than in the video. I did everything 1000% as directed and this time covered it with foil while baking and let it cool overnight. It looks so easy in the video. Now I'm really disappointed in myself. But I won't give up. I am grateful for every tip and advice.
The main question is...how did the bread turn out? Your bread could be more liquid because of the time lapse when filming. If you let the batter rest I think it will thicken as well. However, when I baked this bread (without filming) it turned out great. Whole eggs vs egg whites will affect the color but not the taste. I would like you to enjoy the making process as well as the bread and it sounds like it's upsetting you more than anything.
I actually haven't tested this recipe in a bread machine. Something to do down the road I think. On second thought I would like to test a traditional bread machine bread recipe because that will have yeast in it.

I'm so happy you finally got my favorite loaf pan. The wait time in the oven is just to ensure the bread dries out. I say check the bread on the inside...if it's dry then you don't need to wait. I thought of you wanting to use almond flour so I just had to put that in. Thanks so much ❤️
For this bread in particular there is no wait time. For the nut butter bread there is. It did sink slightly when I didn't wait for at least 20 minutes.
let me see if i can word this correctly so it's understandably if i want to make the bread with half (almond) and half(CK flour) do i need different batches of each flour mixture or just half CK chicken flour and half straight almond flour? since these ingredient are so expensive i don't want to muck it up! lol thanks in advance for any help!
@@CookwithMel1 not really. You did show the almond version and taste it, but you didn’t say whether the flour was one to one between the CK flour and the almond flour. So I’m assuming it’s exact same recipe but just using either of the flour versions.
questions: How long does it keep? Can you grind it up for bread crumbs to make a coating for fried chicken? Can you slice it and fry it? It sounds so easy to make and no hard to find ingredients. I have fatigue issues so easy is important to me.

Please put it back in the oven and let it rest in the warm oven. It could be that your oven lost heat when opening it and the bread just needs longer. Let it sit in the warm oven for 1 hour. Could you please let me know if it works? I will stay online.
Sorry to answer your other question. It is necessary to cover the dough. Kind of like sourdough baking you are creating an oven within an oven so to speak.

Okay Gaby. I hope you didn't throw it away though. I haven't had to do this with CK bread but have with other recipes. After the bake time, turn the oven off and let the bread rest for an hour in the oven while it cools down. Probably only relevant advice if you try it without my pan. Thanks Gaby ❤️
Instead of egg whites can I use the egg yolks for my second loaf because the first loaf Im gonna use the actual egg whites but the the yolks I have left can I use those for the second loaf ??
I want to make this as protein sparing. To do so, I need to remove the butter. Does anyone have a suggestion for replacing the butter - egg white, water, something else?

Hi Becky...it's totally worth the effort. All my baking has turned out amazing so far. I wanted a very easy recipe to share so everyone feels they can make it, so I do think this one is easy. We don't even need a mixing machine whereas you have to whip for some time with hers. I can't wait for you to try it...I hope you do ❤️❤️❤️
This was a bit of a fail for me. I used the recommended 3 cups of almond flour, but it came out very wet. I used the Pullman pan, but wonder if I should have left the lid off. The taste is good though! I may try again with less water, and leave the lid off. Meanwhile, I’m “ toasting” the bread in the oven.

I would rather be honest instead of you wasting your ingredients.
This looks amazing, but I have a couple of questions:
1. Why not whip egg whites before combining? Wouldn't this improve the airiness of the bread?
2. The bread still seems a bit crumbly, have you tried adding Xanthan gum (and more water, of course) to improve elasticity and getting an even more airy bread? Would that even work?

Thanks so much Shayeta...so sorry I' trying to recall all my experimenting. I didn't find much of a difference between whipped or un-whipped egg whites. As xanthan gum is a binder it would solidfy the batter and I wanted to have the bread easy to make rather than molding a ball of dough so didn't try that, and I didnt try adding more water. If you're open to it why not experiment? To taste...the bread didnt feel dense to me but I would love to know your thoughts if you do try the recipe :))))

Hello, you need about 4 or 5 whole eggs depending on how big they are. In any case the egg amount should equate to 1 cup or 240g. Oh do you mean you will use the clean keto almomd flour blend?

You need to use the CK Almond Flour okay. Add 360g worth and blend well with the egg white protein, bamboo fiber and gelatin. This is the flour that works 😊

I baked this bread and it was very good. :) However it was wet in the middle. Next time I will dehydrate it in the oven. Should I leave it in the pan (lid on or off?) or put it on the wire rack?

Mel if you wanted to do a double batch would you just double all ingredients? 4 Tbs baking powder would be a bit much?? I just did that and had to toss 2 loaves😢

New day, new attempt. And more questions. Why is my dough much more liquid than in the video? I mix by hand! Why is my dough darker (with almond flour) and much greasier than in the video. I did everything 1000% as directed and this time covered it with foil while baking and let it cool overnight. It looks so easy in the video. Now I'm really disappointed in myself. But I won't give up. I am grateful for every tip and advice.
The main question is...how did the bread turn out?
Your bread could be more liquid because of the time lapse when filming. If you let the batter rest I think it will thicken as well. However, when I baked this bread (without filming) it turned out great. Whole eggs vs egg whites will affect the color but not the taste. I would like you to enjoy the making process as well as the bread and it sounds like it's upsetting you more than anything.

I actually haven't tested this recipe in a bread machine. Something to do down the road I think. On second thought I would like to test a traditional bread machine bread recipe because that will have yeast in it.

I'm so happy you finally got my favorite loaf pan. The wait time in the oven is just to ensure the bread dries out. I say check the bread on the inside...if it's dry then you don't need to wait.

For this bread in particular there is no wait time. For the nut butter bread there is. It did sink slightly when I didn't wait for at least 20 minutes.

It's in the same video. I show two loaves of bread...one is make with almond flour and appears lighter in color than the chicken.
questions: How long does it keep? Can you grind it up for bread crumbs to make a coating for fried chicken? Can you slice it and fry it? It sounds so easy to make and no hard to find ingredients. I have fatigue issues so easy is important to me.

Please put it back in the oven and let it rest in the warm oven. It could be that your oven lost heat when opening it and the bread just needs longer. Let it sit in the warm oven for 1 hour. Could you please let me know if it works? I will stay online.
Sorry to answer your other question. It is necessary to cover the dough. Kind of like sourdough baking you are creating an oven within an oven so to speak.

I haven't had to do this with CK bread but have with other recipes. After the bake time, turn the oven off and let the bread rest for an hour in the oven while it cools down. Probably only relevant advice if you try it without my pan. Thanks Gaby ❤️

This was a bit of a fail for me. I used the recommended 3 cups of almond flour, but it came out very wet. I used the Pullman pan, but wonder if I should have left the lid off. The taste is good though! I may try again with less water, and leave the lid off. Meanwhile, I’m “ toasting” the bread in the oven.
I'm not sure why that happened. I would let the bread dehydrate in the oven for an hour on low heat
