you want to soak them in COLD water, it removes more starch.

I watched videos on this... apparently with sweet potatoes, the difference in soaking them in water at all is minimal. The one I watched went into the science of why they cook different than regular potatoes, and the starch turns to sugar to make them sweet which is why they aren't sweet when they're raw. So adding corn starch to them helps make them crispier
