- What end result differences are there between wet rendering and dry rendering lard.
We look at total amount of oil rendered with both methods, differences in color and smell, and is one better than the other? As well as how to reduce the smell of rendered lard, because nobody wants to smell like bacon.

I love all your videos. I am about to render beef tallow and would like to know about what temperature you used to the dry render? I know you said low, I am using an electric roaster so can dial in a temp a bit better than if I use my stove top. Would 225*F be too high? Thank you so much for your feedback and support. I would start with the lowest setting possible and slowly dial it up until you see bubbles forming. I cook on gas so I prefer to Wet render Tallow, Lard melts much faster and at a lower temperature so I place a diffuser under the pot but never measured the temperature before. Don't know if this help you at all. Just know as soon as you smell roasting meat or the fat start to brown past a light brown it's probably to hot.

Beef tallow being cheaper than lard is very interesting
I think it's because they can use the pork fat in sausages but the beef organ fat is yucky to eat and propably gets discarded if not sold.
