Easy Breakfast Recipe 3-Bihari Aaloo Bhujia-Easy Recipe Khazana

  • Bihari Aloo Bhujia (बिहारी आलू की भुजिया) or Kurkure Aloo Fry is famous breakfast of Bihar. It can be eaten with roti, puri, paratha and with dal-chawal combination. In Bihar, We usually carry Aloo Bhujiya with puri or paratha. It is a good option to carry while traveling.
    Ingredients
    6 medium sized potatoes
    Small bowl mustered oil (or any other oil)
    1 table spoon cumin seed
    4 to 5 red chill
    ½ spoon turmeric powder
    Salt according to test
    1 table spoon coriander powder
    ½ table spoon red chilli powder
    Process
    Take 6 medium sized potatoes. Wash it properly and peel it.
    Cut it in equal thin finger like shape with the help of cutter or knife.
    Keep all pieces in water for 3 to 4 minutes.
    Remove potatoes from water.
    Put one small bowl of mustered oil (or any other oil) in a deep pan and heat it properly.
    Put one table spoon cumin seed and 4 to 5 red chilli in hot oil.
    Within 10 to 5 second cumin starts changing color then put potatoes in it.
    Cook it on high flame.
    Keep rotating bhujia gently in short intervals to avoid burning.
    After 10 minutes it stars turning golden then put half table spoon turmeric powder.
    When its color changes to almost golden brown then add salt according to taste. Don’t add salt at early stage.
    1 minute after adding salt add 1 table spoon coriander powder and half table spoon red chilli powder.
    After mixing coriander powder and red chilli powder properly, spread the bhujia on the side of pan to remove extra oil.
    Make plain paratha to serve with bhujia.
    Enjoy paratha bhujia with salad and achar.
