From my experience, the most common reasons for the disappearance of textures and other graphical bugs is car mods. If you change cars in the game, do not use car packs. Change one model at a time until the textures begin to disappear, and you`ll understand which model is the reason. The version of the game is also important, 1.0.7.0 the best for mods, in my opinion.
