Hello Folks!
I hope I find you all well. Tonight for tea, I made this wonderful creamy chicken & rice soup, such an easy one pot family recipe. This is very filling…and seriously tasty! The double cream is optional, but absolutely brilliant in a soup like this :) Comforting, indulgent and so delicious. Everything I used will be listed below…hope you decide to give it a go, and if you do…let me know how it went down :)

What I used
• 3 large boneless skinless chicken breasts
• 1 Tsp salt
• ½ Tsp cracked black pepper
• 2 Tbsp olive oil
• 1 Onion, diced or sliced
• 110g | 4 oz or 1 cup of Carrots, sliced or diced
• 60g | 2oz or ½ cup Celery, diced or sliced
• 200g | 7oz or 1 cup white rice, I used basmati rice
• ½ Tbsp Ginger paste
• ½ Tbsp minced garlic or garlic paste
• 4 Pints | 66oz or 8 cups Chicken stock, or broth
• 1 Tsp dried thyme
• 1 Tsp dried sage
• 240ml | 8oz or 1 cup Double, or heavy cream
• 30ml | 1oz or 1/8 cup Lemon juice (optional)

Another lovely recipe, thank you Cheryl. I make a very similar recipe myself but as there are only two of us, I cook the rice separately and then freeze it. I also portion and freeze the soup in batches. That way, when hubby and I fancy a bowl of loveliness, I just defrost the soup, add a handful of the frozen rice and heat the lot together. That way the soup doesn't turn to porridge. P.S Just love your accent and delivery, you're always a joy to watch x

Delicious!!! I like chicken rice more than chicken noodle soup. In the winter, I have added Uncle Ben's Wild Rice, and it is very nice as well.
All I can say is YUM! Thanks for a delicious soup recipe. Definitely on my to do list. Thank you Cheryl. I liked that idea of freezing the rice separately. I do that for my noodle soup recipes. 🤗👍🏻🇨🇦

Chicken and rice soup is so comforting. Sometime I want a lighter version with no dairy. I've been diagnosed with stage 3B kidney failure so I have to watch my Dairy intake. This recipe should adjust easily. TY Cheryl for all you do. Love ya.

If you substitute the cream for a couple of teaspoons of cornflour then you will get more of the chicken taste coming thru.

Oh yummy 😋 , chicken & rice - one of my favourite soups, I make it often but with a lot more veg & loads of parsley, cooking slowly for hours. I’ve never included garlic, ginger, thyme or lemon juice either - will definitely try out this recipe next time I make it, a lot less labour intensive & quicker cooking time than my normal method.

Omg it was so hard for me to find dried thyme recently. I swear not enough people are cooking with it anymore.
Yes, it is harder to find. I usually just buy through restaurant suppliers because I add it to quite a wide range of dishes... from pastas to quiches, to cold meat salads. Stews and chilis. Scrambled eggs and omelettes and roast chicken. Don’t know why it’s fallen out of favor because it adds such a lovely pop of flavor.
@KMcKee-qn6bo most of my passed down family recipes require thyme... especially for the holidays. This younger generation doesn't seem to have the drive I did. And still do. To learn in the kitchen.... when I finally found it after 3 stores I spent a good few seconds smelling my missing herb from the rack 😅
It's my fav....I add it to veggies that I cook for egg white/veggie frittatas n the morning
I love thyme and parsley with eggs veggies and bacon. 😍😍 my toddler, not yet... but I will get her there so I don't have to use two separate pans. She likes cheese. Any cheese lol

wow, you had 3 pots of stock in the ingredients photo and I was like what is going on here? But you only used one in the recipe so that's ok. question, do you wash your rice before cooking?
