Great video. Question: It looks like you are cooking (smoking) the pork with the heat sheild slide open. I had always heard that you keep that closed for smoking, and open for grilling.
You’re right pork butt is the cut of meat that keeps on giving...I tend to you make carnitas taco, then pulled pork sandwiches then use the bone for beans or split pea soup then bone broth.
I actually do the exact same thing but only in the winter. My 820 just doesn’t hold temp very well in cold conditions and I find that just cracking that sear plate will get the temps right where they should be.

Corn on cob?? pork and beans, corn bread, tall glass milk?? Garden tomatoes, cucumbers all mouth watering goes with that pork even tho you make sandwiches, bbq pork goes well over plain rice(time saver instant while pork cooks.)
Dutch, the absolute best kitchen tool for pulling the pork while its still too hot to do by hand is a potato masher. 4-5 gentle smashes with a potato smasher and the whole shoulder is broken down to the perfect size.
Oh I can't thank you enough for this video! I've been so hungry for pulled pork , my husband passed away in May and so I've got his smoker that I've no idea how to use so this is a great help!! ( it's a pellet smoker too) saving this to my favorites..

We love pulled pork. Every once in awhile! I’ll put it in my crock pot season real good with Tony’s Cajun seasoning and 1 stick butter that’s it. Yum! Craving it now lol 😜

To fix the one side cooking faster than the other. Grab a small cookie sheet or metal serving plate. Wrap it in foil and set it on the broiler plate in the middle. Pit boss grills don’t have heat deflectors for the fire pot so the middle of the grill is way hotter than set temp. The sheet deflects the heat and keeps it cooking low and slow

He has the pro series 1100 or 850 from Lowe’s. Its a Lowe’s exclusive. If you don’t have a Lowe’s around the pitboss laredo 1000 is also a fantastic heavy duty pitboss

I've got 2 pellet smokers along with several other implements of outdoor cooking. Food tastes best outside. Waited for the fat cap debate to start. Cook on brother. Stew season is coming soon for the dutch oven.

That pork is good on a grill nice and moist and it tears apart keep it going dutch pork looks good arms family Homestead your food looks good to on the grill
I use a pit boss to smoke as well. My grills temp readings are so far off. When set to 200 the grill is cooking at 300. So I end up using the smoke setting and getting my P setting dialed in and monitoring it with another thermometer
A bunch of videos i’ve seen they say the right side runs hotter, but i’ve noticed on my 850 the left side is actually the hotter side. Do you notice the same thing? I see you put it on the right side.
Awesome fall off the bone tender ! Dutch if you have made sure to get all of the bones and gristle out you can use a mixer to "pull" the pork. Just put the beaters down in a bowl with the meat and cut them on and in less than 5 minutes you'll be finished. Quick and easy and the pieces will be pretty much uniform. Works great with chicken and roast also. Stay happy healthy hydrated and safe. God bless.

I use a water bottle and poke holes in the top to Spritz the apple juice onto the meat. Can throw away and always start with a clean bottle
