Geez, with due respect, that AFR is so damn rich. There’s a good reason why the stock AFR is around 20:1, because diesels generally run lean to keep the EGT in check and the engine to run cool. Anything below 16:1 is already very rich, and will cause the EGT to rise, which results to high engine and turbo temperatures and unnecessary stress to the engine, ultimately leading to the engine wearing faster. Yes, the power and torque may have increased a lot, but is the trade worth it? We have different opinions though.
What your opinion fails to understand is those afr values only happen at full throttle Not at 95% of the time where your driving at part throttle where the afrs are 20:1-18:1

Will the fuel efficiency meter still be accurate after the remap? I try to achieve the highest km/liter that is reflected in the instrument meter when i drive.

I think its a good investment to do, since ur adding more power and torque. But I dont think its really necessary unless your unit reaches more than 250 hp, 600nm.
If you're on budget, at least do upgrades such as braided brake lines, performance brake pads (you can pick from endless brand, japan), and maybe slotted/drilled brake rotors.
DEPENDS, but for this montero I believe it has 4 disc brakes enough to stop the car but if yours have 2 disc brakes front and drums at the rear well upgrading it to a much larger disc is the better option

Yes you can but every change requires you to retuneb
