- Potato and Egg Frico - a crispy Asiago cheese crust made with potatoes and eggs is always a winner at the brunch table. From the Friuli region in Italy, frico is a traditional dish in which potatoes and cheese are baked together. My rendition makes a hearty breakfast or, served topped with salad, a great lunch. Cut in slices, it can be passed around at a cocktail party. It is a favorite breakfast dish when I have my family visiting. There is always room at the family brunch table for a Bellini bar, so I will share my ideas for that as well. When I first moved to New York City in the summer of 1997, my first job was waiting tables at Lidia's "Frico" restaurant. It was my first Saturday or Sunday brunch working there, and Lidia was in the kitchen overseeing the flow of fricos out to the dining room. The ones she made back then were single-serving (like 6 inches), crisper and more thin, and topped with a mixed green salad. They were so delicious. Hi Lidia! Thanks for the memories.
I was sorry to see her East 57th restaurant close. Hope it re opens!
I have been eating fricos and frittatas since I was a child, Now at 60+ I will eat one almost every day no matter what is in them .

Wow what a great meal. I just made mine for the first time and it came out perfect. I added mushrooms and banana peppers to it. Now my husband Jay said this was so much better than an omelet.
