I can go over some of the details of how to read a pattern, but I don't currently have the angel kit. I do go over a few details in this video about how to understand brackets and row repetitions, if that helps.

If you mean keeping track of where your round started, you use a stitch marker (if you have it). The kits don't come with them, but hobby lobby does sell them. But you can also use a bobby pin or a scrap of bright colored yarn. You want to place the object in the first stitch of the round, and then when you get back to your stitch marker, that's how you know you did a round, and after you make the first stitch of your next round, you move the marker. Or you place it in whatever stitch it tells you to place a marker in, like if it's marking a place to put eyes or something, and leave it until it says to come back to it. If you want to mark off on the pattern as you go to keep track of what rows you've done, then you can use a marker or pen or whatever. I'm not sure which you are referring to because I can't remember which I discussed in this video. I think both.
Since this is intended for beginners, some introduction is necessary. But I can try and add a timestamp in the future that takes you to the beginning of the pattern.
