- The tamilian Biriyani has a huge fan following. There is no spelling mistake here- it is biriyani for tamilians, quite different in taste.
Raw Jackfruit Biryani is an exotic recipe with amazing taste and aroma. This is prepared in the same way like any other biryani using raw jackfruit flesh popularly known as Kathal biryani or Panasakaya biryani.

Ingredients
500 grams Basmati rice
3 number Bay Leaf
As needed 0 cashew nuts
1 cup coriander leaves
1 cup curd
3 number garamasala
1 tsp ginger garlic paste
4 number green chilli
500 grams Jack fruit
1 cup mint leaves
1/2 cup oil
1 cup onions
as needed rasins
1/2 tsp Red chili powder
as need salt
pinch Turermic powder
as needed water
Directions
In a pan fry onions till golden brown colour and keep it side.
Soak Basmati rice and cook 70% and keep it a side.
Now take Raw Jack furit applie oil to hand and cut the skin and make into cubes do not make into small pices.
Now take presure cooker add cut jack fruit,turermic powder,salt and little water and cook till it is 80% done.
Take a pan add oil,garama masala, bay leaf, cashewnut, rasins,green chillies ,ginger garlic paste,salt, mix and now add cooked jack fruit,saute it and add mint leaves,coriander leaves,curd, biryani masala if required,and mix well.
Now spread the jack fruit all over the pan then add fried onions half,chilli powder,add 70% cooked rice,mint leaves,coriander leave,onions left over,add colour,cover it with a lid and cook in a very slow flame for 10 min

Mr. Sanjay, after watching many of your videos, i believe you are not only a great cook, but great presenter as well. You clearly explains the origin of that particular dish and how to make it very clearly. I have liked your presentations very well. Keep doing this. You should also do your presentations in Tv also. That would be good.

if u fry jackfruit instead of presure cook it , it will give much better taste and also jack fruit will remain crispy like fried onions as presure cook will make jackfruit overcoked and it ultimately get soggy( very meshy ) type.....i made it by frying jackfruit first and then mix with msalas and then give dum with rice. believe me it become very tasty and much better than this technique

Yes bro , I have catering business once my chef not came to cook for biryani I made Jackfruit biryani for the first time for 300 people , instead of boiling Jackfruit I fried it and mixed with masala like chicken dhumbiryani it was very very tasty on that day I got good compliments from lot of people who ate my biryani I loved it

Hi! I just tried to make Jackfruit Biryani, and I used frozen Jackfruit. I think I went wrong there because everything turned into mush. Or perhaps I boiled it too long? Should I use fresh Jackfruit next time? Please guide me. Thanks!

Saute sliced tomatoes in oil instead, then no need to add curd ... I also do that

jackfruit called katahal in Hindi...we come from eastern UP where we use raw jackfruit a lot...I will def give this one a try...thanx chef!

@dazigg It has a texture akin to a lamb and the best part is it takes in the flavours of all the spices quite well so it tastes nice and savoury ... must try this one Its one of my favourite biriyani’s

Is it possible to describe what it taste like when its like this? I've only had canned jackfruit in syrup so obviously it was sweet. What does it taste like its vegetable form?
It is raw jackfruit and almost tasteless. It takes up flavour of masalas like paneer
It doesn't have that much of flavour...it takes the flavoir from the masalas that we put..😃

yes. only superficially does jack fruit resemble durian. jackfruit has kernels and seeds inside. durian has vertical chambers and sharp spines--- and that obvious pungent smell.
ripe jackfruit has a fermented, fruity smell.
the jackfruit in this video is the vegetable form, which is picked before ripening.

I was disappointed that you add yellow color 👎. Turmeric is much healthier option. Yellow food colors cause headaches as side effect. Let's keep Indian foods on healthy side.
