there's a mechanic that lets you live with one HP if the hit that would've killed you was a one-shot, to make the game more forgiving

I use the wolf trap to keep him in place and then i use any bow and the sinew slicer so I can keep my distance and still deal a bunch of damage.

a strat i like is using the impaler with wolf traps to get him stuck on the border to constantly crit him.
