Shrimp Scampi with Low Carb Cauliflower Rice Pilaf

    I made shrimp scampi with low carb cauliflower rice, here is the recipe!
    Shrimp scampi recipe:
    For the Sauce:
    5 cloves garlic, minced
    1/2 cup white wine
    Red pepper flakes
    Salt & pepper
    2 tablespoons fresh parsley, chopped
    Butter
    Extra virgin olive oil
    For the Shrimp:
    1.5 pounds shrimp, shell off
    1/2 teaspoon each, garlic and onion powder
    Fresh parsley, chopped
    Zest & juice of half a lemon
    Extra virgin olive oil
    Salt & pepper
    For the Cauliflower rice:
    1 cup broccoli floret, chopped
    1/2 onion, diced
    1 pound frozen cauliflower rice
    Fresh parsley, chopped
    Salt & pepper
    Extra virgin olive oil
    Start off by peeling the shrimp and adding them to a large bowl. Season shrimp with 1 teaspoon of olive oil, onion and garlic powder, 1 teaspoon salt, and a few cracks of pepper.
    Preheat a large pan, cast iron or stainless steel, over medium high heat. Add 1 tablespoon of olive oil, allow oil to heat up, then add the shrimp. Cook for 1.5 minutes, then flip and cook another 1 minute. You don’t want to cook the shrimp all the way through, just get a nice crust on them.
    Remove shrimp from pan, and take the pan off the heat so it cools a bit. Add 2 tablespoons of olive oil to the same pan, along with the garlic, a pinch of salt, and a few cracks of pepper. Place pan over medium heat and cook until the garlic is golden, about 2-3 minutes. Add the wine, pepper flakes, and cook until the wine has reduced by half. Add 3 tablespoons of butter, lemon zest and juice, and cook until the sauce thickens Add the parsley, stir wet and lower heat to low. Check for seasoning. You may need more salt. Add the shrimp and juices back to the pan and cook for 2 minutes, coating the shrimp in the sauce. Remove from heat.
    For the rice pilaf, preheat a large pan over medium heat with 1 tablespoon of olive oil. Add the broccoli, onions, 3/4 teaspoon salt, and a few cracks of pepper. Cook for 10 minutes then add the frozen cauliflower rice, along with 1/2 teaspoon salt and some black pepper. Cook for 5-7 minutes and check for seasoning. Add chopped parsley and remove from heat.
    Serve shrimp scampi with rice and enjoy!

    Fun watching things I learned eons ago living overseas but not as sophisticated, always fun. Remember the first time I served avocado mouse and guest asked for me recipe but was shocked it was made with avocados! Nice to see it being introduced to your subscribers.

    Old world wines are not fermented longer. The reason they have lower alcohol and more acidity, is that they are picked at a much lower Brix(grape sugar level), meaning less grape sugar to ferment means lower alcohol and brighter acidity. Sulfites is a by product of fermentation, so all wines have them. The whole “natural wine” is really a marketing term in order to sell wine to “healthy” people.

      There are very specific/good reasons when chefs PREFER garlic powder so don't be so uppity and clueless at the same time (which is usually the case especially on the internet). Google it. Bon Appetit "Why We Love Garlic Powder, Forever and Always".

    😇 Bobby, I love & support your channel and appreciate all the wonderful information you share… thank you! As a naturopath doctor I will share that as much as many chefs use even quality olive oils to cook with, it has actually never been a good idea as olive oil should NOT ever be heated for health reasons (like rancidity, etc… so should only be used on things like salads & just adding at the end of cooking the meal for its added many benefits). The proven healthy oils that you CAN heat safely and use for cooking with are for example… avocado oil, coconut oil, ghee, and good ol’ pastured butter (quality, organic ones of course ;-). 💝💯👍🏻

    Bobby please help I know this isn't the exact right place to message you I'm not sure how to message you but it's Jimmy show just went on and said that Kellogg's is recommending American switch to eating cereal for dinner and I would really like you to do something on that subject please please please please please please please that's so incredibly unhealthy I need to just cut back a little bit maybe on the meat and add more veggies and fresh fruit but instead of saying have a bowl of cereal with milk and fruit that's just a word of mouth of sugar and unhealthy things like oats and corn syrup and everything else that comes with sugar and cereal and milk

      It's pretty much the same as GMO.
      It's genome editing. Instead of a farmers crossbreeding plants for many years to gain a specific trait, they use genome editing and get it done in a much shorter time.
      The traits could be making a plant more drought resistant, resistant to diseases or pests.
