Rainbow Peppermint Patties -with yoyomax12

- These taste just like the commercially made peppermint patties but each of them contains a tiny rainbow.

This recipe makes about 2 dozen patties (about 1 3/4 " diameter)
2 1/2 cups powdered sugar (approx. 337g)
1 1/2 tablespoon light corn syrup (22.5 ml)
1 1/2 tablespoon water (22.5 ml)
1 1/2 tablespoon vegetable shortening (16.5g)
1/2 tsp peppermint extract (5ml)
food colour
Chocolate for dipping, about 8 oz (about 225g)
In a large bowl place the sugar, water, corn syrup,shortening and mint extract. Blend well with an electric mixer or by hand until a soft dough forms.
Divide dough into six portions and dye each portion a different colour.
Roll out a portion of dough on a piece of parchment until it is about 1/8 " thick.
Cover with a piece of parchment and repeat with the next colour making sure that they are roughly the same size and shape.
Continue this way: Parchment, new colour rolled out, parchment etc. You will end up with a stack of colours separated by parchment.
Refrigerate at least an hour or until dough is firm.
Once they are firm you can begin stacking (on a piece of parchment) one colour on top of the other pressing to make them stick together. Cover with a piece of parchment and roll out the combined layers until they it is about 1/4 " thick all over.
You can roll up the dough jelly-roll style or you can cut out circles using a cookie cutter, Place the roll or the circles on a cookie sheet and freeze for 2-3 hours.
For the cut out circles, dip them into melted chocolate to coat and then place on a parchment/waxed paper covered cookie sheet. Refrigerate until chocolate has set.
If using the rolling method, slice 1/4 " thick slices from the frozen roll and dip each piece into melted chocolate.
Please keep in mind that I have not tried any of these with the substitutes, I have no idea how well they work!
Substitute for corn syrup:
Honey, liquid glucose
OR
Make your own:
Ingredients and method for corn syrup substitute
2 cups sugar
3/4 cup water
1/4 tsp. cream of tarter
dash of salt
Directions:
Combine all ingredients in a heavy, large pan. Stir and bring to a boil. Reduce heat to simmer and put a cover on for 3 minutes to get sugar crystals off the sides of the pan. Uncover and cook until it reaches soft ball stage. Stir often.
Cool syrup and store in a covered container at room temperature. It will keep 2 months. Yield: almost 2 cups. For dark corn syrup add 1/4 cup molasses to the above recipe.
Shortening substitute:
equal amounts butter OR margarine
Shortening often sold under the name Crisco,Copha or Cookeen

I am not a huge fan of peppermint, so i divided the recipe in half and flavored one part cherry and the other peppermint! Was a huge success! Thank you for all your awesome recipes and videos!

The 'tie dye' ones look so cool! The rainbow do as well, but I really like the look of the ones made from the scraps! What an awesome way to not waste!

It would taste like pure sugar. Go eat a spoonful of icing sugar and that's pretty much what it would taste like.

These would work with nearly every flavour. So even if you don't like peppermint, you could try cherry or lemon or marshmallow or anything that really suits your fancy I suppose.

If I don't want the peppermint patties to be very sweet is it ok if I only use one and a half cups of confectioner sugar ?
No, because they will be too soft. These are basically made with corn syrup and sugar, no way of making them less sweet.
Just a suggestion, if you want to cut down on the sweetness, I would try using dark chocolate for the dip. The combo of the bittersweet chocolate and the hypersweet peppermint filling tends to result in a nice balance. Its actually one of the few applications I'm fond of for dark chocolate, as I find them way too sweet personally with milk.

Sarah Newell If you look in the description box there are substitutions for corn syrup. Also I believe golden syrup makes for a good corn syrup substitute, although the flavor may be somewhat different in the finished product. I doubt it'll be all that noticeable over the peppermint.
YEAH! I absolutely agree! They brought a smile to my face with the all of the swirling of colors. I actually have all of the ingredients to do this, including dark-chocolate melting wafers too! Im gonna have to get some stuff done around the house before I tackle this...

I love your channel! I tried this yesterday and it came out fantastic! ...I just had to add more water, corn syrup and shortening because the measurements you gave didn't make it "dough-like," it was still powdery and wasn't sticking together.

Made these with vanilla extract and colored white chocolate, totally awesome and just right!
You will still have the scraps from the pieces in between the circles regardless of the way you are making them. Stacking the dough is certainly a lot faster but thanks for your suggestion regardless :)

I like the shape when she rolled out a circle and used the cookie cutter better than the log shape. The log shape made one side oddly straight. I honestly love the tie dye ones more than the rainbow ones. Good job!!!!

Short answer yes. But keep in mind that in order to achieve these very bright colours you would have to add a lot of the liquid kind and this in turn my affect the dough texture. You might have to add more powdered sugar to counteract that.

Hi Yoyomax12! My mom and I tried your recipe tonight with the substitutions for the corn syrup and shortening and our dough was quite sticky. Also, when we rolled it out all our colors blended together and we did not see a rainbow. Great recipe and we hope to try it again with better results. It still taste good though!
Some chocolates are just cranky sometimes. If you find that your chocolate is too thick you can add a little bit (1/2 tsp at a time) of vegetable shortening or low flavour oil to it to thin it. You have to be careful though, if you add too much your chocolate may not set solidly and will come off on your fingers when you eat them.
hi tammy! something i thought of would be to make square patties- you could roll out the layers to a rectangular shape and use a pizza cutter to slice one inch squares. that way, you don't have to reroll anything!

Almond extract does taste different, but delicious at the same time! When you have a limited amount of foods you can eat, it's nice to have a choice, like orange or almond. :)
