If your payload is Heavy with few RCS I recomend useing your engines to Slow down or you may risk overshooting if your stage doesn't have fuel transfer from the payload if any or you should pack a Small Stage just for that.
honestly the best trick for me is to have the second rocket speed up (make opbital ring smaller than the target orbit) or slow down (make orbital ring bigger than the target orbit) until i get within 10km to the target spacecraft and then from there with tracking I keep the rocket at a relative velocity between 15-25 m/s until i get within 1000m of the spacecraft which i slow down to 5m/s and then from there docking is the easiest part Edit: best time to launch the rocket is typically when the target spacecraft is about 1/8th of a circle behind your rockets starting point like think of it as a clock your rocket is the 12 hand and your target rocket should be at the 10 hand
I prefer my payload to be at 120-210 km high, I actually made a massive space station, refuel stations (for long range missions as I only have the more planets expansion and I'm not spending a lot of money in sfs) also I like to point out that if your in transfer orbit, I recommend it to be at 0.0 and time warp near to the rendezvous point (like really near), that way you have the highest chances to dock, I also suggest quick saving to prevent accidents like Going too fast or vice versa and crashing into the craft, or missing it. I will also say that if your now 6000m away from the craft you are about to dock, if the relative velocity is over 200+ I suggest you slow down to 12 meters per second (1-4 metres per second if it's now 200-100 meters away from the craft), to make it easier, use rcs and make sure that the side velocity is at 0, if you want a challenge don't use rcs, if your a moron, or forgetting to put rcs in your rocket, (just like I did in my Mars mission) I have a few tips and tricks myself so just pitch your ideas in the reply section of my comment

I'm honestly very good at orbiting and docking normally but I've been building a very large station and brought it down to under 50km so I can send refuels straight to it but I can't figure out the timing
When you're close to the target vessel you can just tap it and tap "navigate to" to see your exact speed relative to it. Make your relative speed close to stationary and then just head towards it.
What version of SFS you play??? Cause i use the version 1.5.9 after i pass the first rendezvous it doesn't have any scale to rendezvous at the 2nd bypass
Same, launch the first Payload around the height of 150km, then launch the second Payload at 40km and then navigate to the first Payload, after docking, don't click revert to build, instead click build new rocket and launch the next payload
Yeah.....you can but it would be very hard and sould take more time to get near the space craft itself. And also at lower height, you would be faster, so when you see the other spacecraft, you would be traveling to fast to dock with the spacecraft. So I recommend you to place the spacecraft at 150km+ height.

I had put my throttle at 100%, due to which the orbit became oval, and by the way, it was Apogee, not periapsis

When i orbit there's 2 intersections.
My guy there are way simpler ways to do that, for example you can cancle the relative velocity on your first pass
But, you need to act fast if you're doing it and also need big engines
