Gle Racing: The pavolas they ate were very light solid meringue. A proper pav has soft meringue in the middle with a crusty outer shell. These are easy to buy in the supermarket as a base on which you can add anything you desire. The fluffy cream is on top or piped onto the sides, not the middle.
Real deal Pavlova with the fresh soft spongey meringue and thin harder outer casing with the peaks of sweet whipped cream and lashings of passionfruit ugh it’s the best. Their minds would have been blown if they tried that haha. Also, traditional fairy bread is better than the Nutella version. The spread is supposed to be somewhat flavorless so the rainbow sprinkles shine. Good snacks though!
Pavlova always needs to be homemade for the best taste, still spongy in the middle and vanilla and vinegar are key ingredients. If it’s made with just egg whites and sugar it would be so bland!

Hi Sophie - Excellent point about the quantity of milo but I was concentration on explaining how to desolve the milo first otherwise it does not mix with the cold milk and floats on top. Incidentally I live 2 km from were Vegemite was invented in a small factory (now 1930's era flats) in Kerferd Rd, Albert Park, Victoria, Australia. There is a small bolder monument to it in the wide median strip in Kerferd Rd.

And passionfruit pulp is a relatively new thing for pavs which only used to have well drained fruit salad, because the only passionfruits used to grow on vines in the back yard - lol. Kate Marra: It's quite possible Australia copied the Pavlova from NZ, after all we have adopted a hell of a lot of other NZ products and people, but the reality is that there has to a news article, photograph, something which says that X enjoyed a creation that was made in honour of Y after Y danced at the Z on the (insert date here). The new dessert was admired and enjoyed by all. And passionfruit pulp is a relatively new thing for pavs which only used to have well drained fruit salad, because the only passionfruits used to grow on vines in the back yard - lol. Not available in tins from around where I was.
A good delicious pav is a traditional Aussie food it even sounds better when we say it and when people call it the Aussie pav 😛👌🏻
