Actually a titanium or tungsten sponge could work for a plating by shaving the skeleton and letting the bones heal into the metal. Doing this over multiple surgeries would work

You're aware that the neck is also spine, right? Also, the only technical complication with the skull is suspending the brain and eyeballs, which isn't actually too difficult with medical equipment. Neural pathways in the spine are way more complicated. In fact, I would say replacing the spine wouldn't even be worth it. It would be more practical to just give it an alloy coating.
