How to prepare Bharva Karela/Stuffed bitter gourd by Aparna Kalele

  • Bharva Karela/Stuffed bitter gourd
    Ingredients:
    Bitter gourd - 300grms
    Tumeric - 1/2 tsp
    Coriander powder -3 tsp
    Red chilli powder - 1 tsp
    Cumin powder - 1tsp
    Amchur - 1 tsp
    Garam masala - 1 tsp
    Ginger- garlic paste - 1 tbsp
    Fennel seeds/Saunf - 1 tsp
    Chickpea flour Besan - 2 tbsp
    Boiled and mashed potato - 2 medium sized
    Jaggery powder- 1 tsp
    Salt to taste
    Directions:
    -Peel Bitter gourd
    -Slit Bitter gourd
    -Do not remove seeds
    - Rub little salt inside out to bitter gourd
    -Steam bitter gourd in a double boiler
    for 10 mins
    -In another kadai add 1 tbsp oil
    -Add chickpea flour and roast till golden brown
    - Add boiled and mashed potatoes
    -Coriander powder,cumin powder, red chilli powder, amchur, tumeric,Garam masala, Ginger - garlic paste,
    Fennel seeds/ saunf(moti), jaggery powder and salt to taste
    - Mix well and roast for 10 mins on low flame
    - let it cool down before stuffing
    -Bitter gourd are par boiled
    -Wash it with cold water and let it cool down
    - Remove seeds
    -Stuff masala in bitter gourd
    -In a kadai fry stuffed bitter gourd evenly from all sides in oil on medium flame
    -Do not add water while frying
    -For gravy add leftover
    masala
    - Add 2 tbsp water for medium gravy
    -Serve with chapati or dal rice
    Tips-
    1) Check salt before adding
    to masala as we rub little
    Salt to Karela
    2) Add chilly powder as per
    your taste, if you want it spicy
    3) We remove seeds after
    steaming because Karela
    stays firm for filling.
    4) If you accidentally rub more salt on Karela then after steam wash it with cold water.
    5) Do not add water for cooking stuffed bitter gourd
