    Potato & Mango Sevpuri
    Ingredients
    Sliced Potatoes with skin - 2 medium sized
    Oil - 2 tbsp
    Finely diced raw mangoes- 2 tbsp
    Finely chopped cucumbers - 2 tbsp
    Finely chopped onions - 1 tbsp
    Salt & pepper - to taste
    Chaat Masala - 1 tsp
    Sweet tamarind & Coriander chutney - as desired
    Pomegranate seeds - few seeds
    Sev for topping - as much as desired
    Method
    -Wash & slice the potatoes. Don’t slice them too thin. Soak them in water if not making immediately, to avoid browning. Remove on an absorbent paper when ready to make.
    -In a pan, heat oil & shallow fry the potato slices till golden brown on both sides. Take them out on an absorbent paper once done & sprinkle a little chaat masala on both sides.
    -In a bowl mix chopped cucumber, onion, raw mango, salt, pepper & chaat masala. Give it a good toss.
    -In a plate, place the potatoes, top them with the mixture, little coriander & sweet chutney. Garnish with sev & pomegranate seeds.
    -Serve immediately to avoid them from turning soggy.
