Crucial pro tips from a malaysian cuisine chef, always, always removed the seeds from the dried chili because its gonna be burning ur booty and superr spicy, and when making the sambal add tamarind juice, or lemon juice anything sour lime juice to balanced it all out, if its spicy throw in bit more sugar, you cannot failed making a sambal because you can always adjust, just the dried chili seeds part is the deal breaker

At first when I saw u put in so many ingredients for the fried chicken I was like ah no need so many spices. Then I remember dnt qn your fried chicken, itz usually ace. That sambal u hv to put abit more sugar to reduce the spice. It shld not be too spicy n must be bearable to eat. In nasi lemak the most impt ones re the rice and the sambal. Oh for the rice, nxt time u can put that whole box of coconut milk no need to think abt it not being healthy. Btw thank u for trying malay nasi lemak

Or if u think the sugar is too much, nxt time reduce the chilli. The original ingredients for nasi lemak sambal are dried chilli, assam water, belacan (bake first), red onions, abit of garlic. All these grind together and stir fry like u alrdy did. And water cos it cannot be too dry as it will end up too spicy, salt n sugar, and lastly is the fried anchovies.
