Great video - my leftover brisket doesn't last long. Couple of comments - Competition chili has timings for spices/seasoning so they don't boil off the volatile aromatics. Completely understand the smoked paprika - why not at the end to maintain the smokiness? Texas seasoning, but beans, why? BBQ sauce on the finished potato, why? Love making a potato bowl. Great technique for any filling!
