The Gotham pans I bought does the same thing. They're great pans, both Copper Chef and Gotham non stick pans. I don't even use butter to fry my eggs. They just don't stick. I'm pleased so far with my Gotham cookware.
I've learned one thing about these pans and skillets. Don't use a metal fork to turn your meat. If you accidently stab the coating, it will leave a nick in the coating. The pan will still cook but using a fork will eventually ruin the pans coating. I still love these pans though. They clean so easily.
Just the part the pan touches. Any part not in contact with a magnetic surface will not hear up. So you can stick you hand on there and it won't hurt you. Good around kiddos.

You cook the scrambled egg exactly like i do, same things added and same technique! Best way ever for scrammbled eggs.

That trick does work but you have to turn the heat down and let it cook steam for about 3 to 5 minutes
