Hey Justin! When my Cousin-In-Law, retired we made him a wooden plaque that said, "I'm Going Fishing!", to hang on his office wall. At the same time, we presented his Son-In-Law, who was still in the Work Force, with one that said, "I'd Like To Go Fishing!" to hang on his. Ha, ha, ha, ha, ha! That was good improvising on the rack. A generous amount of Olive Oil wiped on it should prevent the fish from sticking to it! You are on the right track & further practice will ONLY speed up the process. The additional space in the Smoke House will make it a different experience. As we all know, the "Proof Of Concept" is a tasty platter of fish that quickly disappears! Michelle's "improvising" with the fan was priceless!
My papa taught me how to smoke brim years ago,been doing it ever since. I never seen them cleaned like that,wasted the best part. Im sure they tasted great! Thanks for sharing
Those hanging looks pretty good. If you are going to keep it for long term storage you do not want much oil on it. Wiping the oil on with a paper towel or rag would be ok. Thanks for this. I would make a wooden rack with a little more room for the fish.

Man, I saw a video back in the summer where J.R. , Nicki, and Mama Willis went fishin and caught some MONSTER bluegills! The biggest ones looked to be TWO POUNDS! J.R's mama's biggest one would cover up a dinner plate! I have seen some bigguns in magazines and videos, but seeing folks that I have met holdin a bream a inch and a half or 2 inches thick just blowed my mind!! You need to sweet-talk J.R. into takin you to that honeyhole! I was plum amazed!... I'm jealous of your water pressure. I don't have QUITE enough to take the scales off... I just get wet and the fish's scales just get ruffled.... The good news about your fillet knife tip troubles is you can just stroll back to your knife shop and take some iron off the back of the spine til ain't upswept no mo' and Bob's your Uncle!
That looks like a good idea . And looks like worked well. Wonder if a fellow sprinkled little cajon seasoning on it before smoking? The most important part of the whole setup and procedure was the ice cream bucket come on .

I wonder if you smoked them to that point then put them in the dehydrator and finish them if it would preserve them. I never smoked brim before .we smoke mullet here. I may try some them and dehydrate them see how long they last in a jar like jerky.
I just had a thought I have some deer hides that need smoked I am thinking teepee smokey fire and fish all at the same time it would be a good denomination in November longhunters 4:314:33

I did a big batch of deer jerky kinda like that in the oven once using the racks, it's a massive space saver
