How to make Hard Shell Beef Tacos

    FULL RECIPE BELOW!
    A yellow crispy hard shell, seasoned beef, lettuce, tomato, & shredded cheese. This is what a lot of people picture when they hear the word taco.
    Given those ingredient constraints, I wanted to make the highest quality version of the homemade hard shell ground beef taco that I could. I focused on the quality of the ingredients in addition to cooking techniques to take the taco from fast-food level to gourmet beef taco.
    Step aside Taco Bell and all other hardshell makers, this is the best hard shell taco you can get!
    -------------------------------------------------------------------------------------------
    -- SEASONED GROUND BEEF --
    - 1 lb 80/20 ground beef
    - 2 TBSP Cumin
    - 1 TBSP Paprika
    - ½ TBSP Chipotle Powder
    - ½ TBSP Smoked Ghost Pepper Powder
    - 1 TBSP Diced Tomato
    - Salt to taste
    1. Set a cast-iron pan over medium heat.
    2. Add the beef and a healthy handful of salt. Brown the beef
    3. Meanwhile, heat a pan over medium-low heat. Toast the cumin, paprika, chipotle powder, and smoked ghost pepper powder. Once the spices are fragrant and warmed through, add to the beef.
    4. Mix the spices with the beef.
    5. Add the tomato and stir to combine.
    6. TASTE IT! Add more salt if you need to.
    -- TOPPINGS --
    - Lettuce, finely sliced
    - Tomato, small dice
    - Cotija cheese, grated
    -- TO ASSEMBLE --
    - Corn Tortillas
    1. Steam the corn tortillas by folding them in a damp towel and microwaving for 60 seconds. This is done to make them more pliable for frying.
    2. Fill the tortillas with a large spoonful of the beef and a small pinch of cotija cheese. Fold them in half.
    3. Heat a cast iron with a thin layer of oil over medium-high heat.
    4. Lay the tacos and fry until the outside is just golden brown and crispy. Flip to the other side.
    5. Lay on a paper towel to soak up any excess oil.
    6. Add the toppings and enjoy the best damn hard shell taco you can get.

    Been subbed for a while and loving the Taco Tuesday series in particular. This videos is one of my favorites now, too. Not just because the way you tackled the taco shells, but I was absolutely cracking up at the captions as the kid slowly crept into the kitchen. I love that you didn't just try editing him out or reshoot like a lot of people probably would have. 10/10

    No idea how icamr across Ethan but love his content. 4 years and his production skills are seriously sharp vs this video.
    The base is there but can see now its someone who commands the space while a little timid.
    Shows the benefits of continuous practice and eefining. Great stuff all the same

    I have had this great desire to have taco with a hard shell. Its not easy to find nowadays so I am all over this recipe. I will also do a veggie version for my son, substituting mushrooms and tofu for the meat. On my way to the kitchen!!!!!

    Growing up never had pre made taco shells. My mom always used white corn tortillas and pan fried the tacos. Now days I use sandwich roast beef slice thin like shredded beef in the taqueria with seasoning (onions, chiles, cilantro, and salsa) to fill my taco instead of ground beef. Love your videos hope to go to Mexico City in March or April.

    Edit 3: It really can't be understated how much better tacos made like this taste than store bought shells and spices. I made some for a friend, and upon his first bite he said "Wow these are really really good. Like, it's surprising how good they are." I used ATKs tacos dorados recipe.
    I'm not sure I can stomach $12 for a pound of ground beef. Maybe for burgers, but the main flavor in a beef taco is the cacophony of spices, so I feel like this is one place crazy good quality beef would be wasted.
    Edit: One note on blooming spices. I don't know if this is common, but every time I bloom spices, everything in my apartment practically smells like the spices ad infinitum. I made tacos at the end of June, moved July 1st, and everything in boxes still smells like tacos. My college apartment windows had bars on either side so you couldn't open them more than a couple inches, so poor ventilation probably has a lot to do with it.
    Edit 2: I'm not really sure what you'll gain from toasting them separately. Blooming them in the beef fat should be more than sufficient to wake up those spices.

      The better taste of loca beef actually goes even BETTER with the spices rather than being masked my them. Like the spices, beef raised with care is very aromatic. Also, your "less expensive" grocery store beef is pumped with water and preservatives to make it weigh more. So while the label might say one pound, it contains less actual meat than a pound of small-farm beef.

    This is literally like my Taco Recipe. I make a fire roasted salsa, and found putting in a 1/4 cup (I do a kilo at a time) into my beef adds flavor AND ACID to blend the taco meat best.

    I do it almost exactly like you do, except I leave out the lettuce and instead add a mixture of pickled, cut jalapenos and red onions. Works well!

    Ethan, I just pulled my Diana Kennedy book out and put it on the nightstand to reread tonight. I totally missed this method (probably just naive) of frying the tortillas. So genius and delicious looking and this is being made tomorrow. Also, I like the romaine tip as I just can't bring myself to buy iceberg lettuce. I'll make a real Caesar salad (with anchovy and egg yolk dressing) with grilled chicken thighs the next night.

      John G Awesome! The one downfall of that book is the lack of pictures, it’s definitely easy to read over, I usually have to read things a couple times to make sure I understand what she is doing!
      Caesar salad is always a winner. I haven’t made a proper dressing myself (yet), but I was reading Samin Nosrat’s method in Salt, Fat, Acid, Heat. Is that similar to the dressing you make?

      @@EthanChlebowski Samin is AWESOME, so joyous and full of zest. Her recipe is the basic one that I make, but instead of adding the mayonnaise I just take an egg yolk, lemon juice, champagne vinegar, and dijon mustard (I will be making mustard at home now), whisk that together and drizzle in good extra virgin olive oil to make a loose mayo, then add an anchovy, chopped, and some finely minced salt cured capers.After that I will fold in some parmasiano regiano "snow", dress the romaine, add some more parm grated, and a steamed egg with a runny yolk with each serving (what DOES one call an egg with a fully cooked white but runny yolk anyway? I think hard boiled implies a solid yolk.)

      This was homemade from one of my cousins, I should have mentioned that! You can use an ancho chile or regular chile powder instead.

I can't find any good Mexican food at all near where I live on LI NY here, and Taco Bell doesn't do much for me, so I may be buying some cast iron sets and cooking up my own quite soon. I've knocked out cajun food and Thai food before, so I am ready for a challenge.

    I just liked you 10 times more when u said u’re gonna toast the spices first! Gosh why there isn’t more people realise spices are way more aromatic when it’s heated (or even bette, with oil). Throwing powder spices straight into watery dishes is such a waste imo

    Followed recipe exactly except for ghost pepper. Measured everything, I even weighed the meat, exact ingredients used were as specified.
    PROBLEM: The beef had no SAVORY BEEF FLAVOR - MONOTONE - ONLY HEAT. THE SPICE BLEND DIDN'T SEEM INTERESTING.
    QUESTION: What went wrong or is the beef just suppose to be a granular heat dispensing vehicle?
    BTW - I love the thoroughness of your videos and your presentation!

      6:27 - The solution is as simple as adding more salt. I'm serious.
      *Salt is the number 1 reason why food doesn't taste good and what separates bland food from great food.* I even said in the video, after my first taste it was alright, but it needed more salt, which I added plenty of. Don't be afraid of it!
      A lot of people think adding things like a bunch of spices, garlic, onion, pepper, is what makes food taste good, but it doesn't. It will still be bland as hell if it's not salted correctly. This is why I try to make it a point in all my videos, that you need to taste and add salt and repeat.
      Don't be afraid of over salting either, the only way you can learn what levels of salt your taste buds like are if you under and over salt it. Then you can dial it in.
      Keep trying my friend, salting is the first skill to master. Once you have it down, everything you cook will be so much more flavorful. Hope that helps!

      @@EthanChlebowski Thanks - will be making a second batch soon. BTW: I really followed the recipe exactly and even got the right cheese. I bloomed the spices exactly. Added a spoon of tomatoes, etc. My only issue was the taste/texture of the beef. Maybe I over cooked the beef.
      BUT - your message is received and I'll work on the salting. Thank you again for your timely responses

      Pretty much impossible. You have to fry ground beef for an absolute age to gett the beef flavour to develop. The first 10 minutes you are just boiling. When the water has all evaporated and it starts to properly sizzle, then the beef taste will come through.
