    I have not tried the bread that's baked with this method. They look different from the ones baked the old way. How about the taste?
    This is more work. They have to put them in the proofer. Lots of pans to wash.
    It's worth trying to compare.

      they do taste different, the taste goes similar to bun bread, also proofing 20 min is crazy short. The dough has to sleep at least 24 hours, this is crazy short and the bread goes tasteless. We bake here differently, our dough sits 48 hours before baked, also keep it mind there are different types of rack ovens. if you have questions reply here.
