You purchased a thin universal grade wire wheel which is too narrow for your grinder. You need to stack two of those together and you will be good to go.
Get a stack of washers to fill the gap. You should be able to match the diameter of the arbor perfectly. Use washers on both sides to place the wire wheel perfectly in the center. Washers, cup-washer, wire wheel, cup washer, washers, nut. Personally, I use the wire wheel without a guard to get better access to clean different shaped materials, but it is certainly much safer with the guard. Always wear eye protection with these, the flying needles will end up in your clothes, but always protect the eyes and perhaps even consider a face shield.
Love the Screaming Goat! I did find a Manual for this Grinder and it had a July 2004 Date on the last page. FYI..nothing about putting a Wire Wheel on it as an option. A piece of pipe might do the job to fill that gap? Look forward to the answer.

Awesome suggestion. As for eye protection, nothing worse than a flying needle in your eye. ;)
Common sense, a few washers to bridge the gap, weight has to play a part for balance load as the stone on the other end will destroy the motor
