Bird Poop Caterpillar Defense Mechanism

These caterpillars that look like bird poop are larvae of the Giant Swallowtail Butterfly. They seem to like my Mandarin plant and the five of them have pretty much eaten it bare. I tried to move them to a different plant and their reaction startled me.
