The only thing I would recommend doing differently is to toss the chips with the flavoring powder while they’re still hot. This is how we do it at my job (we use Tajín not cheese tho) and it helps the seasoning adhere. I’d also recommend doing it because the hot oil is gonna bring out some more flavors from the ground spices as well a help them evenly coat the chip

You can also start by making lightly baked mini-cheese rounds (shaped like Whisp brand parmesan crisps), which cooks the cheese and allows it to powder better using whatever method you use for powdering/grinding. In my area, Cabot white cheddar 1% is easier to find than yellow, but both exist. The 1% white makes =really= good homemade Whisp analogues, too
