    A tip that’s worked well for me is to let your meat come to room temp (30-40 min) before the sear. That way the meat doesn’t seize up and you get a beautiful crust. Also, put those herbs to good use! Melt some butter in the pan with the herbs and baste your steak after that initial sear. Baste baste baste. Really enjoyed your video.

    • @julianedgar7491

      Shut the fuck up. Just high heat for a good sear you fucking noob.

    • @phishtrader7744
      @phishtrader7744 5 лет назад +6

      Bringing the steaks to room temp first does next to nothing for promoting a good sear. Getting a good sear is all about heat transfer to the surface of the steak and the interior temp of the steak doesn't really matter as much. What matters more, is starting with a steak that has a surface that is as dry as possible. It takes a lot more energy (and therefore time) to boil off surface water than it does to just raise the temp of the water in the steak several tens of degrees. Water retards the Maillard reaction, making it take hours rather than minutes, so you need to either dry the steak off or cook off the water before you can get a good sear.

    Kiefer .. I do essentially the same but next time try this .. brush a thin layer of olive oil directly on the steak, use course sea salt instead on both sides .. but allow it to stay on the steak for 1 hour per 1". Not only does it enhance the flavor but it increases the steaks tenderness. Enjoy!

    I love that Keifer Sutherland made a cooking channel with no lapel or shotgun mic. I can’t stop watching. Weird, cool, authentic. 👊👍👏

    Just a suggestion I was told-don’t put hot pans in water when they are hot, it will warp them. Just a friendly FYI 👍🌸. Can’t wait to try your steak recipe, looks yummy 😜👏🏼

      @@Bullock0099 Not true. Expensive pans warp too if going from really hot to cold.

      Good tip. However, I suspect if it did warp he could afford a new skillet. Perhaps even an iron skillet. :)

    Kiefer, since you're posting instructional/how to videos, do you think you'll ever post a guitar lesson video?
    This video made me hungry, btw!

    You are an incredible man. You act, you sing, and now you cook. Is there anything you can’t do? I love all of your movies (Lost Boys is #1). I would love to see a tour of your beautiful kitchen. Thank you for entertaining us for so many years and I hope many more to come ❤️❤️❤️
