I have made all kinds of miniatures and the best glue for wood, is Aleene's fast grab tacky glue. It gives you enough time for drying, but dries strong.
This is really well done. I really look forward to your videos because there doesnt seem to be that many people working in this scale. I dont know if I told you already but you can get 3.75 inch (10.5cm) action figures that work really well with these size horses from AliExoress. You do have to paint and dress them (you can get ones with moulded clothes too...JoyToy 1:18th also on AliExpress). The good thing is that you can pose them how you want both on and off of the horses. I am off to rewatch you aging wood, lol! Have a great week and keep safe!
