you were right. this is the soup i was so happy cooking because of the light spilling into my kitchen. this might be the prettiest video on my feed. so i did a minimal voiceover and i kept all the sounds for you (including the honk outside my window). This was something I had pretty often as a side to my rice and banchan (side dishes). so here's the recipe l've tested to serve two. one for you, one for.. you with leftovers

This was something I had pretty often as a side to my rice and banchan (side dishes). so here's the recipe l've tested to serve two. one for you, one for.. you with leftovers
3 cup anchovy / dashi broth
2 Tbsp mild doenjang
1/2 Tbsp gochujang
1 tsp sesame oil
1/2 small zucchini
1/2 onion
Small potato
1/2 tofu
1-2 scallions some napa cabbage

1. While u prep, boil water with dried anchovy and dashi, then remove them from the broth.
2. Chop all veggies into small flat pieces.
3. mix doenjang, gochujang, sesame oil, and use a sieve to mix it into the broth.
4. add the veggies and boil until potatoes are soft
5. add tofu and scallions, boil another 5 minutes.
6. Enjoy with rice
doenjang is a dense paste made of fermented soybeans, similar to miso but less sweet, much stronger, sharper, pungent and complex. this is why you won't need much else for the soup to season. use an anchovy broth to deepen the flavor, but let the doenjang do the rest. :)

This is my comfort food on a cold day! I would not add the zucchini until later. It cooks much faster than the potatoes and becomes too mushy! Also, don't forget to clean the anchovies.
