CLOUDS COOKIES
2 egg white (room temperature)
1/2 cup sugar 120ml - 100g
1/4 tbsp vanilla extract 3.75ml - 1.08g
Optional: Sprinkles
To make this delight, there are some easy secrets that are most important to take into consideration:
1- Heat the oven to 107C
2- Beat the egg whites (room temperature) at high speed until they start to form stiff peaks
3- Lower the mixer speed without turning it off (low speed), and gradually add the sugar, continuing to beat until a snow point forms.
4- When the egg whites form a stiff peak, turn off the mixer and, using a spatula, mix in the unmixed sugar.
5- Add essence or lemon juice and beat again for a few more minutes
6- In a pan with baking paper and 2 spoons, make the cookies, and if desired, decorate with sprinkles
7- Bake your cloud cookies in the preheated oven for 1 hour. Without opening the oven, after 1 hour baking, turn off the oven, (NEVER OPEN THE OVEN DOOR UNTIL PROCESS IS FINISH WICH IS FOR A TOTAL OF 2 HOURS), leave it in the oven for another 1 hour with the oven turned off. (do not leave it for more than 1 hour as it maybe will burn) The cloud cookies will continue to bake with the heat of the oven, so it is important that you do not open the oven door.
8- After the hole process is finished, take the cookies out of the oven and let the cookies cool completely. You can store, after cold, in a container with lid
