I think the design of the ones online that helps prevent the burning, is that there are two holes in the bottom of the wood and a cap that goes over the chips. Once you get the chips smoking, you put the cap on. The burning then tries to pull oxygen in through one of the holes and the smoke goes down through the other. With the design you have, you need to continually burn the chips to get it to smoke enough. That causes the bad scorching. I think the taste would be better with less heat as well.
My friend has a $50 one and she smoked my ice coffee with cinnamon wood chips. That was the tastiest coffee I’ve ever had. Now I can make my own, thanks.
I like the idea of the funnel. Will have to order some. Are you buying the shavings or are you making your own? If so, how are you making them? I was thinking a small forsner bit. Did you notice a diffference from funnel to dowel other than the wood burning?
How would you sell these at Festivals? Would you include torches, small bag wood chips etc? Or do you find people just by the smoker and get the rest elsewhere? Also, that looks like my garage except diet dew and star wars. Kingsford charcoal in my shop.
If you use the pipe screen, grind up the wood pellets first they might not take as long to burn. I use wood shavings and it doesn’t take but about 3-5 sec to produce a lot of smoke. And causes minimal burning of the wood. Just my two cents for what it’s worth.
I had an old espresso basket that I tried out, and it seems to work ok. It probably uses more wood chips than yours, but it's big so maybe it won't damage the surrounding wood. I only tried with the basket on top of a small glass, not with wood around it, so it's only a guess.

Id do both. Bundles seem to better than just the smoker online. But not sure at festivals.
