One story is that in the old days some were reusing oak barrels previously used for fish, so they burned the inside of the barrel to get rid of the fish taste and smell. They discovered that the charred barrel was better than a new not charred barrel. I prefer 100 proof for drinking straight.
That's an interesting experiment, there are lots of experiments you could do along these lines. You can buy moonshine in some stores and finish it that way. You can buy low end bourbons and finish them that way too, I've seen you do that before.
Yeah I've done that with the cheap bourbons and they've come out really good, but this is the first time I've taken the raw white dog and actually age to what I would consider bourbon
