  • Hi, If you are completely bored with how you cook your tomatoes, you can try this. Two ingredients with unlimited options. Inspired by the amazing, Dominique Crenn, it is suitable for a vegan diet. Tomato Jelly and Tomato powder. The first is a fun twist on fresh tomatoes and the latter is the concentration of vegan umami flavors and can be added to pretty much anything.
    I first blend the tomatoes with a splash of water, and separate the solids from the tomato water, either with the juicer or better with a cheesecloth.
    Season the tomato water as you like. Prepare about 5% of the Tomate water weight of agar agar. dissolve it for about 10 minutes. Spread the leftover tomato paste on a tray with baking paper, and season with salt and pepper, olive oil, and herbs. dry for a few hours in the oven. Heat the Tomatoe water to about 95 degrees Celsius and let it rest in the fridge. The tomato paste comes out from the oven like tomato crisps. A snack on its own. But I grind it to a powder.
