Idea for taste test: Tofu. Tofu price makes difference, it is a common knowledge among Japanese. Even among the supermarket tofu, the price difference is very big, but it's not that expensive unlike sushi. In Asakusa you probably find good traditional tofu shop with vibe so that itself might be interesting. Other tofu related food will be there so check it out.
As a certified tofu lover, I both cosign this and also spit in rage because I was in Japan last year and didn't prioritize trying expensive tofu nearly enough.

Night and day difference! I have a colleague at work who talks to me about how much they like Sushi, and I ask ''Oh where have you eaten?'' and they tell me they have had it from YoSushi (a shitty British sushi chain) and the supermarket. I died inside.
I got weirdly excited to see the Tsuge logo on the building you were standing in front of at 0:34. It's one of those things that 99% of people wouldn't care about, but they make incredible smoking pipes and they're one of very few pipe makers in Japan that actually export. I don't own one yet, but I'd love to visit them if I ever end up in Japan.
You can enjoy your sushi however you want, but might want to know usually people dip the fish side into the soy sauce, not the rice, which soaks up too much and could start falling apart.

My biggest suggestion is, cheap vs. expensive Japanese-style curry. Or I guess, chain vs. mom-and-pop. I suggest this as a huge fan of Japanese curry who currently lives in Tokyo, yet consistently finds that chain curry and like, grocery store bento curry absolutely DESTROYS the stuff you find at curry specialty restaurants. It's very odd, as it's the only type of food for which I find this to be the case here, yet it's just so consistent! I'm always trying new curry restaurants, and they're always just... OK. But then I hit up Go Go Curry, or My Curry Shokudo, and it's like, a transcendent experience. Even CoCo Ichibanya tops most curry cafes and specialty restaurants. I'd be very curious to see if you have the same experience, or if you find the expensive curry specialty places to be worth the price.
We lived next to a high-end grocery store in Tokyo. There was an old lady that said the sashimi was "very good" there. Yep, the little old Japanese lady was right. Some of the grocery stores are almost better than some restaurants XD. Then, if locals are buying, it should be pretty good.

The franchise "Gatten Sushi" is very good. It's like a mid-high end franchise. Hama Sushi and Sushiro are low tier. But if you're buying sushi for takeaway, the best is to get it from supermarkets especially during discount hour to maximize price:value.

Try frozen foods that most tourists never try. Ramen, pasta, and fried rice from supermarkets and convenience stores. Karaage, okonomiyaki and frozen fruits.
So my friends and I grew up with fairly well-to-do families in Southern California, a rather high cost of living region. We typically call the phenomenon "lifestyle inflation". It's very easy to get accustomed to something that better than average, and it can be really hard if it's also more expensive. It changes your entire perspective and makes it hard to go back to better value/lesser quality things. Despite coming from well-off families, we were always reminded to try and avoid this overall.
Mudan, have you tried Uni / Sea Urchin before? It remains possibly the most pungent thing I have ever eaten, and yet it's very much a luxury food in Japan. There's quite a few places around Roppongi that will serve quality Uni. I'd love to get your review!
Your "expensive" sushi is still cheaper than most places in the US at that same quality level💀 It used to be cheaper but covid absolutely demolished any form of eating out cheaply here. Back in 2019 or so, my local mid-tier sushi place would be ~$4.75-$5 for two pieces of salmon nigiri (still a rip off tbh), but now that same place is $6.75 for two pieces of salmon nigiri.

Sushiro is usually pretty good, kind of the same level as Kappa sushi. I tried Sushizanmai in Tokyo and it was good too but not necessarily worth the wait and the price difference. I haven't tried more expensive restaurants but I'd like to give it a shot on my next trip.
Since I only eat sushi occasionally, I usually go for the most reasonably expensive I can find in the area. Sushi is more of a taste-thing than a fill-my-stomach thing anyways.
Day 31 of Asking Mudan to visit Hirata Swordsmith to learn how to forge a knife :D You could do an expensive knife vs a cheap knife comparison. I've bought some hand forged knives that were pretty cheap (old stock) 1500Y and they are ultra sharp out of the box. Then again the store was kinda in the middle of no where about 45 minutes away from central tokyo.

Good sushi in Japan really is godlike. Ever since I had sushi in Japan, I rarely eat sushi in Europe. It's just not the same.. It's a blessing and a curse.

If you want to take it up a notch, you could go to (oh so original) Tsukiji fish market and get some fresh sushi/sashimi from the inner/covered area of the market and go eat it on the roof. IIRC they also have a vending machine for barbecue meat and you can grill it yourself at that very same roof. But yeah I think there are at least two more levels on top of the ones you had in the video: lvl4 Tsukiji fish market fresh sushi and lvl5 like michelin omakase style sushi place. (but tbf in this last step it's also other cuts and fishes/meats like uni that really push it to the next level) (totally unrelated maybe something video-worthy could be doing a video about trading card games of some sort? it's a pretty big deal overall and there are so many cards selling cards and singles, so many different IPs as well) (ah also, maybe cheap VS expensive izekaya?)
My experience is that compared to Los Angeles costs of sushi, japan has the same quality for half the cost. So your 1000 yen sushi in Japan (kura, sushiro) would be comparable to $20-25 sushi in LA
