one of the best thing i love about Mark is that i get to know the taste of the dishes he eats because he perfectly describes it, but also I get to learn the history of the food and the incredible cooking process. KUDOS MARK. KEEP DOING WHAT YOU DO.

mark drowns everything in chilli and just fks up all the flavours the chefs work so hard to flavour. seriously you could cook bland food and it wont matter because he drowns the crap out of it. its moronic
That clay pot rice is like a super unique take on mui choi kau yuk. I don't know if I'll ever eat at The Chairman, but it's certainly inspired me to try new things in my own kitchen. And when Chef Andy scooped the entire crispy layer out of the pot, my eyes went nearly as wide as Mark's used to. 😳😅 Those wonton noodles are definitely one of my comfort foods. Thanks for taking us along, Mark. You had some real haters in this vid. Some ppl just can't help but live with negativity.
My wife is Persian and they also do a crispy rice called tahdig which means bottom of the pot. It is the first part of the rice that is taken and eaten. They flip the whole pot of rice out onto a platter and you crack through the tahdig to get to the normal rice. The presentation of the perfectly formed dome of rice always amazes non-Persians when we have them over for dinner. This was a great video.
I love this guy, but because he gets sooo emotional & sooo enthusiastic over every bite of every dish he tries, it’s hard to believe which dishes are truly amazing.
As a local resident in Hong Kong, I can say you really know the good places to eat. Lau Sum Kee and The Chairman are very famous. I have tried to book The Chairman last year. The booking was up to 6 months and I gave up😂
HK born and raised but had lived in many countries for almost 30 years. Indeed HK does offer the BEST Cantonese wonton noodles … but there’re many places that are equally good (if not better) as 劉森記. Personally I prefer 麥文記 in Jordan. Their authentic and delicious wonton noodles and braised pork knuckle noodles are famous among the local community. Mark, thank you so much for making all these wonderful videos. It’s always a joy to watch you eat 😂 and your enthusiasm is infectious! Travel safe and bon appetit! ❤
Totally agreed!! 麥文記 has the best wonton in HK. and I am missing it soooooo much right now! 劉森記 I would prefer their beef tripe and goose intestine noodles top with with shrimp roes.
My favorite wonton noodles was in 麥忠記in 永吉街, the blanched gailan with the beef brisket sauce is the best. That was years ago. I heard that it’s renamed 麥奀記。
Ok now I'm convinced I can literally reside in Hongkong and be happy for a lifetime just based on the culinary culture alone. So far, every episode in Hongkong is phenomenal but this one is special because each restaurant reviewed has to be some of the best food this world has to offer honestly. From the delicate thin noodles with shrimp wontons to the fresh clean beautiful flower crab soaked in that wine sauce is a foodie paradise. I love the preperation of each dish from the wok chefs displaying such skill & craft expeditiously. The crispy rice in the clay pot gets me everytime even more so when clam broth added omgoodness!! Yes, I too noticed the shift in Marks manner. Even his guests really seemed careful. I am sure video was reviewed prior to release but great to see Chinese food. Interesting to see the man bext to Mark with ear bud yet partially covered by the white sign. Maybe I am wrong but the manner after the chairman was totally different.
He is just doing this for effect. He should expand on his vocabulary and improve his acting. Same expressions for everything is very fake. That said, he did get good guides like Virginia to get access to restaurants and their kitchens. She’s the star here because of her earnest enthusiasm and knowledge of Cantonese cuisine. BTW, the Chairman is definitely one of the greatest restaurants in the world in my opinion but Mark’s expression and comments are no different to his review of Indian street food 😂.

Asia is my ultimate holiday destination and one day when i win the lotto jackpot, my first trip will be to Hong Kong, China, Singapore, Thailand. After watching all the noodles dishes over the years on Mark's videos, I started eating my noodles with the broth instead of draining out the water. I am however scared of eating street food in Asia because I never know what it is that I'm eating 😅

Last year due to an accident which involved me accidentally ingesting a chemical, I developed severe esophagitis and gastroparesis. I'm such a foodie and yet now it's hard for me to even swallow deli meat or overcooked pasta. When I watch videos like this, it's almost like I get to enjoy great food again. I can't risk going to a nice restaurant and having to run to the bathroom to have to throw up, it's so humiliating. So thank you for your content, it really brings me a little joy.

I am Italian, Abruzzo.. where pasta was invented, gnocchi, ravioli and also lived in Thailand & Traveled thru Thailand and understand the freshness and taste. I guess we are lucky. Great post highlighting food delicacies oin HK from all levels! more please~ Also Lau Sum Kee is still one of the best in HK, but there are still so many nice wonton noodle place that you should try if you find time. At Chairman restaurant, the wastage of choi sum is more than 50% and the hard skins were being peeled out. As for the beef, usually Yellow Car beef from Shantong is the best choice. This looks like the epitome of stir fry beef w ith green!! The most challenging stinky tofu is the steammed one, that stinky smell can be pick up 2 streets away!! BBQ is another soul food for HK citizens indeed, for better restaurants , chef will not provide any BBQ pork if the supply does not meet the standard! Oooh melts in your mouth texture of "mui tau" part and the meat flavour are subliminal indeed! Geoduck is probably the best shell fish, used to be in abundance in coast of BC and we oft buy it cheap for sashimi and to make congee for dirt cheap price! Only white meat used for sashimi and yellow part for congee~~~ That eel, I must go try , salivating already!! Flower crab that size is very rare and most of them had already been reserved by restaurants!! The meat steammed with egg looks so sweet , succulent and tender and is totally comparable to blue crab , makes me so hungry!! What kind of wood is ised to smoke the goose? Generally we use lychee wood That Claypot rice with pork belly screams "eat me" just by watching your video! Crispy crust looks so perfect in shape is evenly distributed, bravo!! Even desserts look amazing. You should visit dessert shops in HK before you leave HK!! Considering the food quality, the price, 200USD? is very cheap consiser the cerebral experience in holy grail of gourmet food! A very well made food video unlike 99% of other RUclipsrs' , I can picture and imagine the taste vividly by your detailed yet easy to apprehend narratives, again thanks for the post so much! And I haven't watched the food court part yet. Now I'm making plans already to go to one of my top favorite Cantonese restaurant for tonight's meal~
looks amazing but i would pick the meat out of the shell vs biting into it, shell and all. if you use the handle of a very small spoon, you can scoop the meat out very easily. i have shown how i do that in some of my “how to eat” blue crab videos. try it some time with a spoon handle. this chop sticks or a pict, the meat is hard to grab. but wow, looks amazing!
The Chairman does offer some of the best Cantonese food, but it’s important to keep in mind that it’s so expensive that it’s out of reach for most people in HK.

The Chairman is one of the best restaurants for Chinese food, good pick. But one bad thing is very difficult to make a reservation, I guess your friend know them well. The guy sat behind your table is the Financial Secretary of HK.
How does Mark keep as healthy as he does? He eats fatty foods full of carbs and cholesterol on a consistent basis, with spices and salt added as well. He seems to be eating numerous meals on his trips. Is all of this just some editing magic (he eats less than what we think he eats) combined with the exercise we do not see him doing off camera or does he just have good DNA? I envy what he’s able to eat and get away with. I mean he’s not in his 20’s anymore (nearing 40). Mark what’s your secret?

I've been to Lau Sum Kee and tried out their signature Wonton Noodles Soup and Braised Beef Brisket Tendon Tossed Noodles. The beef choy sum usually not special. Since it's at chairman restaurant, they used the wagyu beef as high standard. Then the next few dishes are artistic appetizers. I had geoduck in soup and salad, but had yet with congee. I think they used the duck egg yolk blended with the shao xing wine chicken fat broth to finalized the flower crab and the roast goose could use some sauce for dipping. That vegetable of the pork skin and dried shrimp is the same choy sum he had earlier. The only differences of picked veggie preserved pork belly clay pot rice is they don't add soy sauce when is served. The next version of clam rice soup could have served first rather near the end. And the desserts are not heavy. Once again the reason why they won't let him pay for that meal because his migrationology video will bring them clients and they'll earn more business thru his advertisement. I rarely ate sweet and sour pork, but in HK I won't mind to have it in one of my meals and same with the egg plant dish. I don't think they deep fried the chicken. It's called crispy roasted chicken. The seasoning flavor of the morning glory vegetable is strong from Thailand nor any Southeast Asian cuisines compare to HK. And that classic soy sauce fried noodles can be found in street food as well.

Mark I am watching you at 10.30pm and now you made me hungry. I saw you went to Trinidad and Tobago. You loved it! See if you can return to the Caribbean...Barbados has great food, and Martinque(French colony). In Barbados...the indigenous foods are Coucou and steamed fish from Grannies in Oistins. Also Uncle George at the market side, swordfish, Tuna with macaroni pie, provisions, gravy and salad. Be there on a Saturday for their pudding and souse ( pickled pork and baked sweet potato pie). Barbeque Pig tails. Fry pork chops and fries. Try Bajan soup in Spieghtstown at Kingswarf. There are great restaurants all over Barbados. See if you can get stew seaeggs ,and they have good rotis at KDs in Blackrock, and doubles in Warrens opposite KFC. Roasted Breadfruit filled with either saltedcod buljoy, smoked herring or pigtail mix in Black rock. Coconut roll, meat rolls, and currants roll are comfort sweets. ❤ All foods is Martinque taste great...French with creole take.

I'm such a foodie and yet now it's hard for me to even swallow deli meat or overcooked pasta. When I watch videos like this, it's almost like I get to enjoy great food again. I can't risk going to a nice restaurant and having to run to the bathroom to have to throw up, it's so humiliating. So thank you for your content, it really brings me a little joy.

Mark, your the best. Talk about the history, the dish, the atmosphere, the experience, microscopic details of every daste. I am Italian, Abruzzo.. where pasta was invented, gnocchi, ravioli and also lived in Thailand & Traveled thru Thailand and understand the freshness and taste. I guess we are lucky. Watching a kitchen with 3 huge mortar and pestle I knew these guys are pro's. This was Isarn.

Also Lau Sum Kee is still one of the best in HK, but there are still so many nice wonton noodle place that you should try if you find time.
At Chairman restaurant, the wastage of choi sum is more than 50% and the hard skins were being peeled out. As for the beef, usually Yellow Car beef from Shantong is the best choice. This looks like the epitome of stir fry beef w ith green!!
The most challenging stinky tofu is the steammed one, that stinky smell can be pick up 2 streets away!!
BBQ is another soul food for HK citizens indeed, for better restaurants , chef will not provide any BBQ pork if the supply does not meet the standard! Oooh melts in your mouth texture of "mui tau" part and the meat flavour are subliminal indeed!
Geoduck is probably the best shell fish, used to be in abundance in coast of BC and we oft buy it cheap for sashimi and to make congee for dirt cheap price! Only white meat used for sashimi and yellow part for congee~~~

Flower crab that size is very rare and most of them had already been reserved by restaurants!! The meat steammed with egg looks so sweet , succulent and tender and is totally comparable to blue crab , makes me so hungry!!

looks amazing but i would pick the meat out of the shell vs biting into it, shell and all. if you use the handle of a very small spoon, you can scoop the meat out very easily. i have shown how i do that in some of my “how to eat” blue crab videos. try it some time with a spoon handle. this chop sticks or a pict, the meat is hard to grab. but wow, looks amazing!

The Chairman is one of the best restaurants for Chinese food, good pick. But one bad thing is very difficult to make a reservation, I guess your friend know them well. The guy sat behind your table is the Financial Secretary of HK.

How does Mark keep as healthy as he does? He eats fatty foods full of carbs and cholesterol on a consistent basis, with spices and salt added as well. He seems to be eating numerous meals on his trips. Is all of this just some editing magic (he eats less than what we think he eats) combined with the exercise we do not see him doing off camera or does he just have good DNA? I envy what he’s able to eat and get away with. I mean he’s not in his 20’s anymore (nearing 40). Mark what’s your secret?

I've been to Lau Sum Kee and tried out their signature Wonton Noodles Soup and Braised Beef Brisket Tendon Tossed Noodles. The beef choy sum usually not special. Since it's at chairman restaurant, they used the wagyu beef as high standard. Then the next few dishes are artistic appetizers. I had geoduck in soup and salad, but had yet with congee. I think they used the duck egg yolk blended with the shao xing wine chicken fat broth to finalized the flower crab and the roast goose could use some sauce for dipping. That vegetable of the pork skin and dried shrimp is the same choy sum he had earlier. The only differences of picked veggie preserved pork belly clay pot rice is they don't add soy sauce when is served. The next version of clam rice soup could have served first rather near the end. And the desserts are not heavy. Once again the reason why they won't let him pay for that meal because his migrationology video will bring them clients and they'll earn more business thru his advertisement. I rarely ate sweet and sour pork, but in HK I won't mind to have it in one of my meals and same with the egg plant dish. I don't think they deep fried the chicken. It's called crispy roasted chicken. The seasoning flavor of the morning glory vegetable is strong from Thailand nor any Southeast Asian cuisines compare to HK. And that classic soy sauce fried noodles can be found in street food as well.

In Barbados...the indigenous foods are Coucou and steamed fish from Grannies in Oistins.
Also Uncle George at the market side, swordfish, Tuna with macaroni pie, provisions, gravy and salad.
Be there on a Saturday for their pudding and souse ( pickled pork and baked sweet potato pie).
Barbeque Pig tails. Fry pork chops and fries. Try Bajan soup in Spieghtstown at Kingswarf. There are great restaurants all over Barbados. See if you can get stew seaeggs ,and they have good rotis at KDs in Blackrock, and doubles in Warrens opposite KFC. Roasted Breadfruit filled with either saltedcod buljoy, smoked herring or pigtail mix in Black rock.
Coconut roll, meat rolls, and currants roll are comfort sweets. ❤
All foods is Martinque taste great...French with creole take.
