  • Shun Premier Chef's Knife Repair and Thoughts on Shun. I purchased a damaged Shun Premier 8-Inch Chef's Knife for about $75 off eBay, which I still think is one heck of a deal. The tip was broken off and I managed to repair it with my existing knife sharpening equipment.
    I'm not a big fan of Shun knives, but at the price and with a small portion of the tip missing, I was up to the challenge to complete my first knife tip repair.
    My relationship with Shun knives haven't been too great in the past, perhaps this one will change my mind?

    I don’t really buy mass marketed Japanese knives I have way too many knives but I prefer true handcrafted small shop knives so if you don’t love shun but you’re willing to spend I recommend going to like Japanese knife imports or chef knives to go! I did buy my mom a set of shun classics at Christmas and she’s in love with them it’s funny she LOVES the 6” chef knife above all others that didn’t even come in the set I just did t love the petty shape so I added the 6” chef to act as a petty/utility

      I purchased a Moritaka AS Gyuto about 3 years ago. As beautiful and sharp as it is, I just never got used to using it. I prefer using the Misono UX10 over it.

    Imagine buying a knife with a nick in it, then trashing it in a video, and then not using it.

    I had a large chip out of the blade of a Shun Classic paring knife and I sent it to Shun (they resharpen for free) and they fixed it for free. The only downside is that it takes several weeks to get your knives back from them.

      Yes, they offer free lifetime sharpening on all of their knives.

    The dimpling effect is called "Tsuchime", and you are right, it's mostly a pain unless you are only cutting hard vegetable. I have a Sakai Takayuki gyuto I almost never use (other than for certain fish) because small scales (like from an Aji Horse Mackerel) always end up getting trapped in the dimples.
    Shun knives are certainly overpriced, the same could be said with any mall/department store knife. Goes double if you are buying a knife set. Shun knives don't perform any better than than cheaper Japanese knives of the same steel, what makes them expensive is the "fluff (nicer boxes, someone who speaks English)" they put over it, this is why they can offer deep "discounts".

      Back when I was first getting into knives, I met a Shun snob. Looking back, he didn't know much about knives. I could go for some Aji Horse Mackerel nigiri right now. The Shun Premier in this video is in a box right now. Currently using a Wusthof Classic Ikon 8-inch that I picked up for $100 brand new.

    Have you sold all your Shuns? They are overpriced, but their lifetime free sharpening is amazing. Plus they have incredible resale value. Thanks for the video!

    I'm pretty used to pinch grip, but same as you, I feel Shun classic being weird in hand. But I take my fingers back by a step, put my thumb and index finger just around the "neck" of the knife right in front of the bolster, it feels pretty nice, the D handle fits perfectly in my hand. I like Shun classic better than Premier, but yes, I do hold them differently than other knives.

      Have you tried the Shun Kanso? I find it pretty good for pinch gripping. I like it better than the Premier and Classic. I just sold my set of Classics. My Kanso review is here: ruclips.net/video/h9EhtyNSf58/видео.html

      I watched that review! Good job! The handle looks pretty good to me and I image it would feel quite comfortable. But unfortunately Kanso is not available in Europe here AFAIK. The closest I can get is Miyabi Fusion which has a resin handle. Then I'm not sure if I would like the balance of it.

    I got this knife and it SUCKS.
    £259 it cost me. Had it professionally sharpened by two sharpening companies locally. Why do it not stay sharp?

    A chipped shun? No way! Shuns suck ass. My shun 8 inch premier is worse than every knife in my collection. It chips and dulls way too easily. Sorry but the primary grind is too thin for VG10. It literally will dull and microchip during normal use cutting veggies. It’s pathetic. Shun won’t even back their overpriced products and claim “improper use”.
