I love using a method called the plot embryo, and would highly recommend especially when plotting character arcs. It really helps keep the internal conflict and misbelief at the center of your character's journey.

I love how you think about character, coming from a theatre background. I am a theatre graduate (who never went into the profession either haha...) and sometimes when I read books I really get hit with the 'that's just not something a person would do' thoughts. It's so important to know their past (to an extent, as you said) to know how they would really react. I've always wanted to have at least written one book in my life, if not become a full time author, so bring on NaNo!
