- Tender-rich beef rendang. This recipe is easy to assemble, and there are many downtimes, so you can go by your everyday activities whilst this cooks away in the background. This is version 1 of a series of tests for this recipe until I get it perfect, but it's incredibly delicious. Please enjoy.

Ingredients -
Spice Paste -
5 - Golden Shallots
10g (0.3oz) - Ginger
10g (0.3oz) - Galangal
3 - Lemongrass stalks, Root Only, Finely Chopped
6 - Garlic Cloves
4-8 - Dried Chillies, Soaked In Hot Water & Deseeded
Beef & Sauce -
3 Tbsp (60ml) - Vegetable or Mustard Oil
1kg (2.2lbs) - Chuck Steak or Beef Short Rib
4 - Star Anise
5 - Green Cardamom Pods
4 - Cloves
1 - Cinnamon Stick
1 Stalk - Lemongrass, Bruised
310ml (1 1/4 Cups) - Coconut Milk
180ml (3/4 Cups) - Water or Chicken Stock
2 tsp (25g) - Tamarind Puree
6 - Fresh or Frozen Kaffir Lime leaves, Thinly Sliced or Left Whole
3 Tbsp (30g) - Toasted Shredded Coconut
1 1/4 Tbsp (15g) - Palm Sugar or Granulated Sugar
Seasoning To Taste
Jasmine Rice -
1 Cup (200g) - Jasmine Rice, Washed
1 1/4 Cups (310ml) - Cold Water
3 - Kaffir Lime Leaves (Optional)
Notes -
This recipe is version 1 of my beef rendang. I've been playing around with this recipe to get it perfect. If there's any particular ingredient you enjoy in this recipe, let me know in the comments.

little tip here: you can use the dull or flat part of the knife to bang out the lemongrass, the the middle part of the kefir lime leaf should be removed to avoid bitterness and just cut the dried chilli before soaking it. The seed will come out naturally when you cut it while it still dry.

normally when westerners tried to cook our traditional cuisine, they tend to ingnore so many simple spices. but here, you cook it like we in malaysia and indonesia did it.

I'm not Indonesian but my husband is (we live in Indo too) and we both loved this recipe! You can cut the lemongrass or tie it in a knot and drop them in the pan for easy removal. Pounding the thick ends first allows more flavor to come through.
I make this often (UK) over the last 25yrs, and it's authentic, and very precise. Get's my vote

Pro tip - roll up the lime leaves together into a bundle to quickly easily slice them all super fine at the same time

Lemongrass is easy to grow in pots and would work well in Greece if you can get a hold of some. It smells great and repels insects as well.

this looks very tasty!! i personally don’t eat a lot of meat, so i like to put in baby potatoes and kidney beans along with the beef, and it’s been one of my absolute favorite dishes ever☺️
You can use chicken thighs as well, but they need less cooking time.

Mate I love your recipes so I'm impressed with your great take on an absolute Indonesian classic! I can suggest for version 2.0 to get that real Indo authenticity, grab some candle nuts. Grate five of them into the spice paste. You should be able to find them at an Indonesian grocer - Bakulan in Daw Park seems to be the local hotspot for Adelaide. (And while you're there, if you get more inspo for Indo recipes, thank me later :D)

It looks absolutely delicious. What would the difference have been had you used coconut cream?
We mostly have cream only in Indonesia unless you buy the milk fresh from the market. The cream is far thicker and fattier so I usually use half or two thirds of the amount required and add water or stock & blend it to keep the volume.

quite a big suprise this guy can commit the rendang cooking style down to the dried chillies.

I made Beef Rendang last week and it tasted "gritty" from the dessicated coconut. Can I leave it out ? And it was quite sour. I think I used too much Tamarind !

Very nice, Jack. I will give this a try one day. The local versions are too spicy for me. (The locals are chilli pepper nuts.) I still wanna taste my other food for instance. You can eat rendang without rice. :)
