It would be the same as going to see Logan, but never having watched any of the X-Men movies. Would I be able to get by watching logan if I've only watched the movies with wolverine in them? It still blows my mind how an xmen can not have wolverine in it, but if there's some plot enriching thing hidden in ther for logan I could probably choke them down.
Logan has almost no connection to the previous X-Men films. Completely different style, completely different storyline and tone, even a completely different time period. As long as you have a general understanding of who Wolverine and Prof. X are, you can watch it without having seen any of the other films. The movie does a good enough job of building up the characters and making you care about them. So I would argue your comparison is not really valid.

It's not enough to justify watching all the movies. Maybe just the first one, to understand why Xavier took someone lost and unwanted like him into his school.
